Default REC: Fajita Idea

Had a brilliant idea for Low Carb Fajita's, as we can't get LC Tortilla's here in New
Zealand.

Stir fried chicken strips that were dredged in Cumin (used a little sesame oil with peanut
oil in a good hot electric wok)
Made guacamole (have recipe if U need it)
Sour Cream
Salsa of Red onion, tomato and cilantro with lemon juice
Stir fry of Red+Green Bell peppers and small onion
Grated cheddar cheese.

Now the kicker! A nice large Cos lettuce, lightly chilled to make sure it is crisp. Cut
the base off and serve the individual leaves as the "tortilla". Spread the Fajita
ingredients along the spine of the Cos lettuce and wrap and eat!

Great Meal! About 4-5 grams each person, mainly from the onion/tomato

That's what i use!!

Lettuce leaves!

And its funny, cuz tortilas don't even taste like anything anyway, so they
are not really missed

I have never met the lettuce leaf I can wrap something up in, that
doesn't fall apart immediately. I just mix the sour cream and
guacamole into the beef and peppers and eat it with a fork.

I like to use cabbage leaves, nuked for just a few seconds to make them
soft.
