Spicy Chicken Etouffee
very nice, Lee
Nunya B. wrote in message ... This is one of the recipes I slightly modified from my favorite restaurant. 1 pound uncooked boneless, skinless chicken breast 1 tsp hot pepper sauce 1 tsp sea salt 2 cup onion(s) chopped 1 cup green pepper(s) chopped 1/2 cup celery chopped 2 tsp dried basil 2 tsp dried parsley 2 tsp minced garlic 1/8 tsp cayenne pepper 1/2 cup white wine 2 tsp whole wheat flour 2 tsp olive oil 2 Tbsp Butter Buds Powdered Mix Cut the chicken into bite sized chunks and mix with hot pepper sauce and salt. Set aside for at least 5 minutes to let chicken marinate. Spray a heavy skillet (cast iron) with cooking spray. Prepare the Butter Buds with hot water (1/4 cup) and add to the veggies while they are cooking. Cook the onions, green pepper, celery, basil, parsley, garlic, and cayenne pepper about 20 minutes until veggies are sticking to the bottom of the pan. Mix and let sticking occur 2 more times. Remove from heat. Add 1/4 c water to the pan to deglaze stirring thoroughly until everything is loosened. Cook another 2-3 minutes. Stir in wine, flour, 1/4 c water and chicken. Turn heat to low and simmer for 10-15 minutes, stirring constantly until thickened. Add salt to taste. Serve with natural brown rice. Garnish with chopped green onions and parsley. 4 points/serving not including rice. The original recipe called for a whole chicken deboned and then cooked in chicken fat rendered from the skin. The vegetables were originally cooked in 1/4c clarified butter - the Butter buds add some butter flavor to compensate. If you have a properly seasoned cast iron skillet then the sticking shouldn't be hard to remove. I use a large non-stick pan and the veggies will still stick a bit. My DH said the dish tastes like what we get at the restaurant. Enjoy! -- the volleyballchick |

and I just thought, if you want to read some good articles and see some good
recipes, join the free part of the weight watchers site and read there to learn more about weight watchers and see some great recipes, Lee Deb in Northern California wrote in message ... Kaitlyn, I am an adult now, but wished I had caught my weight when I was your age. I was 12 years old and weighed over 200lbs at 5'6". I have never been at a normal weight in my entire adult life. I have been struggling all along. Talk to your parents about seeing your doctor to see if you have any health issues or if it just your eating habits. If it is ask the doctor for a note to okay that you join weight watchers. Then ask your parents to take you to a meeting. If your family is concerned for your health the way you are they will be supportive of you. Please eat at least 3 meals a day, restricting your food intake will cause you to lose weight, but it will screw with your metabolism, so that when you do eat, it holds onto everything you give it and then you will regain your wiehgt very quickly. You need to eat a controlled diet of correct portion sizes and well balanced. You also need to make sure you drink plenty of water and get some kind of exercise. Exercise can be something as simple as taking a walk, going for a bike ride or swimming. Good luck in getting the help you need at home and come here anytime you like for the support you need along the way. Debbie "Kaitlyn" wrote in message ... I have been fat all my life the scary part is that I am only 14 years old and I weigh 195 and I am 5'4" a couple of days ago I weighed 210 and thats when I decided enough is enough I stoped eating 3 meals and only ate 1 and it is a slim fast I feel ok and I am not starving but I whanted to know if any one else is that young and that over weight and also if they are trying the same thing as me its embarising to say this but I need to know. -- Kaitlyn |

Minimum age to join without parents consent is 17 years old. Minimum age all
together is 10 years old. As a minor you need a doctor note that says that it's healthy for you to follow the WW program AND the note must also give either a weight goal or a weight range goal that would be healthy for you. Get help, what you're doing is dangerous and sure to fail. Will~ "rmr" wrote in message ... The advice others have offered is good. However losing weight at your age is different to losing as an adult. ( for instance it should be easier!). I don't know what what the minimum age for weigh****chers, I suspect it will be 18. IMO your best bet would be to go along to your doctor's surgery and ask there. Ray |

As a leader I have to say that a vast majority of the members do better on
the newer plans. The plans are changed as the research results come out so that we have an up to date plan. You don't have to like it, but it does work. The numbers are there to prove it. Will~ "Lá~ká~ Wáná" wrote in message . com... "George" wrote in message ... You posted on a newsgroup consisting mostly of WW members. They'll advise you to consider joining WW. Wrong! These people are all overweight and have been so for years, notwithstanding their WW memberships. The original WW plan was most effective. I can honestly say everyone I knew making the meetings lost considerable weight. But they keep changing their plan, and changing it for some reason, until now many people I've known lose little or no weight on it. I think they're trying to allow too many (even though they're healthy) foods and still keep it low-calorie. One of the hardest of diets to follow for many people. Whatever you do, don't join WW! Consider the source of the advice. Better to try and possibly fail than to not try at all. There are those who do reach their goal on the WW plan. Your parents may not know enough about nutrition to guide you properly. Ask them to take you to see a nutritionist. What you need at your age is a solid understanding of proper eating habits that will become a way of life for you, NOT a fee-based membership in a "club" that allows you to eat treats then makes you compensate by counting stupid points. You'll be stuck on the WW treadmill, and overweight, the rest of your life. And pay monthly fees for the privilege. Wow, that's a pretty dim view of WW you have there. Perhaps some day they'll get back to more reasonably priced meetings and closer to the old plan. Ask any normal-weight person you see whether he/she lost weight as a WW member. Not ONE will say that. Will~ WW is the first thing I always recommend when someone asks me how I dumped that first 50lbs - but I am honest and tell them it didn't work well for me. That I lost less then 1 lb each month. That I lost the weight low-carbing and walking. Some people hear the word "walking"... exercise... and OH HORRORS!!!!...they immediately give up. I tell them many people have lost weight on both of these diets without excessive exercise. If one diet don't work or suit you, you try the other. It's cool that you found what works for you. You might want to visit news
groups that are either about diets in general or even the low carb NGs... You'd find less resistance there than in a Weight Watchers support group since you seem to enjoy and profit (health wise I mean) from another weight loss system. I think the name of the newsgroup says it all. It is for WW support. I've lost 25 pounds and have maintained a long time. If I stray from the plan, it is easy to return. The principles of healthy eating, exercise and portion control are lifelong tools for maintaining and having good health. Audrey |
