Default Lunch ideas w/o cooking

How about buying an electric indoor grill? I purchased one last year (I think it's
sunbeam but not sure), sits on the counter and cleans easily. We don't use it
often as hub loves to grill outdoors. But for some things it is really great, and
is a nice option for those in apartments or places where they can't have outdoor
grills.

Thanks for the idea. I don't have a grill though...do you think I could
recreate that in an oven or pan? What kind of rub did you use on the

Hi Julie,

What about if on sunday you grill a few boneless skinless chicken breasts

so
that you can have a chicken caesar salad or my favorite is mexican chicken

&
bean salad, here's a picture of it when I made it awhile back
http://www.fotolog.net/giggles/?photo_id=6621143 It packs a lot of
protein and is very filling.

Hi everyone,

I need some ideas for things to bring for lunch to work. I have been
packing a sandwich for the last two weeks and it's starting to get

boring.
I don't want to have to heat it at work because that would add an

additional
step and I won't want to do it.

There are probably loads of things that I'm not thinking of so and idea
infusion would be most appreciated.

TIA,

I don't have/use a recipe, just fly by the seat of my pants with what is in the
fridge at the moment. Typically I cut up 2 sweet peppers (any color), slice
zuchini, slice yellow squash, slice red onion, cut up cherry or grape tomatoes,
quarter mushrooms. Sometimes I throw in broccoli, cauliflower, green beans,
whatever. The last time I made it I had some corn on the cob ... I cut the
kernels off the cob and threw it into the baking dish. Quantities depend on how
much you're making. I always make a ton, as I eat the leftovers and it goes over
very well. I spray well with cooking spray, sprinkle with herbs (usually thyme,
rosemary and basil - sometimes throw in some minced garlic) - mix gently and spray
the top again with cooking spray. Bake at 350 or 375, stirring every 20 minutes
or so. Just keep an eye on them so they don't burn, usually takes about 40
minutes or so to cook - again, depends on the temp. This is one dish that is
really very adaptable. Nothing is wrong to put in, seasonings or veggies -
anything goes.

I just spray a cookie sheet, put vegetables on spray again put under broiler
for a few mins, watch to adjust to your oven in mine is about 3 minutes,
then turn and another minute or so, then cool, but my oven runs hot, maybe
someone with a stove made in the last twenty years can help better with

Thanks Joyce. I'll try that. Last time I tried roasting veggies they
smelled fabulous...and then I opened the oven door *grumble*

We have an indoor grill, DeLonghi and it looks exactly like a grill (has
slats that are hard to clean). The rule with the grill is that the person
cooking on it has to clean it and I really don't like cleaning it. (It was
a gift that dh really wanted. So I got it for him under those conditions.)

Hadn't thought of it that way...I've known what my triggers are for a while.
I'm only recently doing anything about them.
Some days I give in to them anyway.

I have to know the "enemy" before I can overcome it.

For me, carbs are a bit of a trigger. I can eat them and eat them and

eat
them and never know where my fill is. I especially love anything

bread-like
so I try to stay away from it as much as I can. Some days I succeed and
then there are other days.

Fruit is a good idea. Speaking of, I have cut up strawberries that I

should
do something about before they go bad. I will pack my lunch for tomorro
after I'm done posting here.

working to make it a positive thing. What about fruit salad? or maybe
crackers and deli meat for a change, or switch breads to pieta, or

There is a deli in the downstairs of our building, so I go there (I

will
buy
a soda and I eat with ladies who will purchase their lunch from

A salad isn't a big deal because I can buy that at the deli.

I have tried heating something up in the office and then bring it to

the
deli, but by the time I get down there my food is cold. I don't

like
cold
food that should be hot more than eating the same cold sandwiches.

One of the things I've tried doing while eating is to make it a

pleasant
experience so that I can enjoy what I'm eating-otherwise it'll be

gone
and
I'll have forgotten what it was so I'll go for more. I get very

upset
with
dh when he pulls out a magazine even if he is reading it to me. The

TV
is
never on during a meal, no radio, no phone, etc.

People forget to respect that you are eating and expect you to

a
fork and knife. If you have a salad, how do you manage that? Are

you
going

your

"skiur" wrote in message

Cream cheese and jelly sandwiches sound sinfully delicious. I

already
take
cottage cheese with fruit/veggie to have with my sandwich. I

sandwiches.

I may bring in a crab salad though...that's pretty low in

calories
and
quite
delicious. I'll play with that today and post info on it

tonight
if
it's
a
success.

I know it's a lot easier to have leftovers that pop into the
microwave,
but
that would mean I'd be eating in the office. I don't like

eating
in
the
office. The lunchroom has a weird feel to it and there are some
people
that
I'd rather not spend time with at lunchtime. If I eat at my

coat I'm going to try to walk during lunch.

BTW, I find it more work to pack cold lunches each day. I'd

pack

just
pop them into the microwave at week each day.

I'll try that one again. I tried to do roasted red peppers that way...no
luck either.

I can make crabcakes and I can make a fluffy omlet that doesn't droop once

succeed with roasting veggies.

My WW leader raves about roasted veggies, the way she does them is to slice
them thin and place on a cookie sheet, spray lightly with an olive oil spray
and then put in the oven until done, she likes her when they turn black on
the edges, as she says the sweetness of the veggies comes out from the
caramelization.
