Lunch ideas w/o cooking
How about buying an electric indoor grill? I purchased one last year (I think it's
sunbeam but not sure), sits on the counter and cleans easily. We don't use it often as hub loves to grill outdoors. But for some things it is really great, and is a nice option for those in apartments or places where they can't have outdoor grills. Lunch ideas w/o cooking
I don't have/use a recipe, just fly by the seat of my pants with what is in the
fridge at the moment. Typically I cut up 2 sweet peppers (any color), slice zuchini, slice yellow squash, slice red onion, cut up cherry or grape tomatoes, quarter mushrooms. Sometimes I throw in broccoli, cauliflower, green beans, whatever. The last time I made it I had some corn on the cob ... I cut the kernels off the cob and threw it into the baking dish. Quantities depend on how much you're making. I always make a ton, as I eat the leftovers and it goes over very well. I spray well with cooking spray, sprinkle with herbs (usually thyme, rosemary and basil - sometimes throw in some minced garlic) - mix gently and spray the top again with cooking spray. Bake at 350 or 375, stirring every 20 minutes or so. Just keep an eye on them so they don't burn, usually takes about 40 minutes or so to cook - again, depends on the temp. I just spray a cookie sheet, put vegetables on spray again put under broiler
for a few mins, watch to adjust to your oven in mine is about 3 minutes, then turn and another minute or so, then cool, but my oven runs hot, maybe someone with a stove made in the last twenty years can help better with times, Lee skiur wrote in message ... We have an indoor grill, DeLonghi and it looks exactly like a grill (has
slats that are hard to clean). The rule with the grill is that the person cooking on it has to clean it and I really don't like cleaning it. (It was a gift that dh really wanted. Hadn't thought of it that way...I've known what my triggers are for a while.

I'll try that one again. I tried to do roasted red peppers that way...no
luck either. I can make crabcakes and I can make a fluffy omlet that doesn't droop once it's out of the pan, but I can't make rice w/o burning it and I have yet to succeed with roasting veggies. How about putting soup into a wide mouth thermos container then it will be

My WW leader raves about roasted veggies, the way she does them is to slice
them thin and place on a cookie sheet, spray lightly with an olive oil spray and then put in the oven until done, she likes her when they turn black on the edges, as she says the sweetness of the veggies comes out from the caramelization.
