Zero point mushroom soup: anti-troll medicine! :)
Yummy invention of mine!
1 large onion, diced 4 stalks of celery, sliced 1 clove of garlic, minced 500g mushrooms, sliced olive oil spray 2 pints vegetable stock In a suitable sized saucepan spray a little oil and fry the onion and garlic gently until they just start going golden... Add the celery and fry for another minute or so... Add the mushrooms and fry for 2 minutes, stirring occasionally. Now, you can use any sort of mushrooms you like, but cheap and cheerful standard white mushrooms are just fine. This is a great way to use up slightly tired mushrooms that have been lurking for a few days at the back of the fridge... Add the stock (made with a stock cube is just fine), and bring through the boil. Simmer gently for 10 minutes. Use a blender (I have a hand held one) and blitz it to a purée. Point free, very tasty, quite filling. I love cooking and cook at least one proper meal every day. This is one of my minimalist soup inventions. I do others that are much more complex or are done in several stages, but this is almost instant. Try today's minimalist dinner: Take one medium chicken breast, and cut in to strips. Fry in a brief spray of olive oil in a non stick pan... This is about 2.5-3 points depending on the size of chicken breast. Mine was a 3 pointer! Tip half a bag of salad on a plate. Sprinkle with a couple of teaspoons of your favourite low cal vinegrette dressing... Dump the fried chicken pieces on top and season to taste. If you like carbs with your dinner, serve with fresh crusty wholemeal bread. Me? I'm gonna finish off the last tortilla with some more of the salad - sans dressing coz I used the last of it!
