Default REC: Chicken Enchiladas

Chicken Enchiladas LC


2 cans 13oz chicken breast in water. (Drained) 0g total
1-4oz can chopped green chilies 1g total
1 pint heavy whipping cream 25g total
2 cups shredded Colby jack cheese 1.6g total
10 Tortillas ("LaTortilla Factory") 30g total

Makes 10 servings with 5.8g carbs each serving

Directions:

.. Heat oven to 350
.. Mix chicken and chilies in large bowl
.. Lay out 10 tortillas on cabinet
.. Place equal amount of chicken mix on each tortilla and roll
.. Place tortillas seam side down in large baking dish
.. Pour whipping cream over top
.. Bake for 35 minutes
.. Sprinkle cheese on tortillas
.. Bake for additional 10 minutes

Why not just omit the tortillas completely? The other ingredients are
so wonderful that the tortilla wouldn't merely be the highest carb
source, but also the least appetizing taste-wise.

Made these last night for dinner. Only things I did differently was I
put some Mexican Ranchero cheese inside the enchiladas and poured some
green chili sauce on top with the cream. Came out awesome. Thanks
for the great idea.
