They aren't that high in carbs, only verboten on induction. An 8 oz glass
of tomato juice has 9 net carbs, a medium whole tomato 5. That fits in many
low carb plans very nicely and they are full of things that are good for
you. They are acidic which makes them good candidates for home canning.
I'm sorry you had a bad experience but tomatoes are really a wonderful
fruit.

| You don't make tomatoes palatable. You stay away from them. Not only
| does a tomato have a lot of carbs, in my mind a tomato is a dangerous
| thing.
|
| I worked in a canning factory back when I was just out of high school.
| It only took a short time period of time working with steaming
| tomatoes on the assembly line before the acid from the tomatoes
| started taking the skin off of my hands, arms, and leg spots. It did
| that to everyone, no matter how much you tried to protect yourself.
| It was the only vegetable I worked with that actually caused body
| damage. Even after 40 years, tomatoes still bring back bad memories.
| The situation would make a good horror movie.
|
| One of the blessings of the low-carb diet is that it considers
| tomatoes to high-carb to include them in the basic diet. Thank God! A
| great excuse not to eat tomatoes!

I worked in a pea factory just out of high school. Didn't eat peas for a
couple of years. I suspect that after seeing how any food is bulk
processed, many people lose their appetite for them. I could tell you some
awful stuff I learned about peas, but I won't.

My point is, you probably saw more about tomatoes and how they are processed
than any of us would like to. That doesn't negate the fact that they have
healthful benefits. They also fit into the low-carb lifestyle (just not at
the beginning).
