Default Rec: Cherry Vanilla Omelette

After a couple of miserable vanilla omelette flops, I really like this
one, thanx to the poster in one of the other omelette threads who
suggested filling an omelette with cream cheese and Steele's jam!

2 eggs
2 TB. vanilla protein powder
2 TB. SF vanilla syrup
2 TB. cream or lc milk
(the ingredients can be adjusted to taste)

Mix well and cook the way you normally make an omelette.
(I melt 1/4 tsp. butter in a preheated 8" skillet...med., not
hot...pour in the mixture and let set part way, cover with foil, turn
down the heat to low until set). Before folding in half spread with a
mixture of:

1 oz. cream cheese
2 TB. Steele's Cherry Pie Filling

A little under 6.5g net carbs
Approx. 300 cal. (more if using cream)

I opted for the pie filling over the jam due to price vs quantity. And,
it's delicious! Because of the 24 oz. size, I froze most of the pie
filling in 2 TB "cubes" in an ice cube tray.

Sounds pretty yummy. I have a jar of Lucky Leaf SF cherry pie filling
(sweetened with Splenda) and some cream cheese. I think I can sense another
upcoming meal here! :-)

Oh wow, this sounds like a great "something different" to do for a
meal once I'm in maintenance.
