If you weigh 298 and haven't lost in weight in a while of low carbing, you
are definitely eating too much. There is no magic -- eating too many
calories can definitely stop weight loss and you can even gain weight LCing.
Some people enjoy eating enough that appetite suppression alone is not
sufficient to create weight loss. You might be one of those people.

Suggestion #1. Set your calorie level at 10x body weight, which for you is
about 3000 calories per day. Assuming you're not already eating less than
that, do that for a week. If the scales don't move, drop the level to 9x.
Do that for a week. Keep dropping until you see progress.

Suggestion #2. Alternatively (and likely to produce quicker loss), since you
know you can survive on 2000 calories per day on low fat, set your calorie
level there (at 2000 kcals per day) for LC. You should be less hungry on
LC compared to LF, so in theory it should be easy for you to stick to this.
Use fitday.com to track your intake if you don't already or you don't have
another good means to track.
