Default need low carb creamy mushroom sauce

Hello,

I have a low carb recipe that I think would go well with a creamy mushroom
sauce but have been unable to find one through google. Is it as simple as
adding thick cream to fried mushrooms or something?

It's exactly that simple
mushrooms in butter ... maybe a little garlic, dash of salt and pepper ...
cream. If you get it a little to thick, add a bit of water.

Make a white wine & cream sauce.

Use a heavy skillet, add your mushrooms, some shallots, fry in a little
butter, then add fresh cream and a cup or so of white wine, increase the
heat to intense and keep stirring while boiling off the wine as quickly
as possible. It will reduce to a thick, tasty, and very creamy sauce.
Also nice if soft green peppercorns are used instead of mushrooms.

Do you buy the peppercorns soft or do you do something to them to soften them?
I LOVE a good peppercorn sauce but when I try to make one the peppercorns
always end up to hard.
The only time I have even had remote success was when I soaked them in water
overnight. But it seemed that a lot of their flavor was lost. However it
occurred to me after the dish was prepared I could have put the water in the
dish as well ... lol
