Personally, I would stay AWAY from the muffins. Irregardless of their
low-carb content, they most often chemically affect our bodies the same way
as high-carb foods. Thus making them NON-low-carb in the long run.

Eat meat, ingest fat and drink water. Bye bye bloating.

However, for the lucky people out there who eat these Atkins muffins and
remain in ketosis - and with no other ill effects - the muffins can safely
be deemed as low-carb.

nor Don Wiss's coconut almond muffin recipe. They contain no carby
ingredients and are definitely muffins.

Lowcarb foods that have similar names to high carb foods aren't
automatically high carb foods, no matter how often you assert that
they are.

Could you tell me where to find these, Jamie? Google turned up lots of
Debbie's recipes, but no blueberry muffins. SO loves blueberries, and I'd
rather offer these to him than a blueberry piesigh, drool

I was intrigued by the coconut almond muffin recipe, and usually go back to
the earliest date I can find it in google, to get it in its original form.
Don has posted this recipe several times, but he got it from:
http://www.paleofood.com/baked.htm
and the person who developed it is Kathleen something. Don't mind me, I'm
just a little anal about recipe credits. G


Almond muffins
--------------
1 cup almond butter
1 cup sliced raw almonds
1 cup pure coconut milk
2 cups shredded unsweetened coconut
3 eggs

Beat and pour in muffin cups. Cook at 400 for 15 minutes.

each muffin, and bake 25-30 minutes until muffins are golden
and the tops spring back to the touch. Enjoy.

Makes a dozen muffins. Each muffin has 3g carbs and 1g fiber,
19g protein, and 260 calories.

Thanks Damsel, but I think I may pass on this one-between the almonds and
the coconut, it sounds a little TOO divine! Maybe I could make a batch and
then freeze them? Then I would be less likely to inhale the whole batchG

Hi Lynne,

There's no way in hell I'm going to make these. I did put them into
MasterCook so I could maybe make a batch when we had overnight guests. I
am a muffin fiend. I'm not safe around them, and I avoid them like the
plague. The food shelf got some boxed muffin mixes yesterday.
