Hi all. I have put my bread machine away for the past several months and am
getting close to my goal weight. I was wondering if anyone has any good
recipes for low carb bread. I must say...almond flour sure sounds good to
me. Anyone out there using it in low carb bread? What about other ideas on
a bread machine recipe. I would like to find healthier flours and ways to
cook bread products.

Default Bread machine -- almond flour or some L/C flour Recipies

Well, I found one, but I don't know what Farmer's cheese is.

1 pack farmer's cheese -- near butter in supermarket
1/2 stick butter -- room temp
4 eggs
1 teaspoon baking soda
2 1/2 cups almond flour
1/2 cups atkins bake mix


Put farmers cheese, butter, eggs and baking soda in
the food processor until creamy.

Add: almond flour and bake mix.

Mix up a few seconds, until everything is combined. The
dough is very sticky.

Grease a bread pan well. Oven 350 degrees. Plop the dough
into the pan, you might have to use your hands. Bake about
50 minutes, until brown on top.

When it's cool, cut the loaf in half, then make slices off
of each half - they're the size of regular bread slices. So,
for about 60 carbs a loaf, you get at least 12 big slices of
bread at 5 carbs each (less, if you're a fiber subtractor).
Plus, it doesn't taste like SOY!!!! It tastes like whole
wheat. You'll want to eat the whole thing - it toasts well,
lots of butter - YUMM! I made french toast with it, and once
in a while I have a sandwich.



952 Calories (kcal); 95g Total Fat; (71% calories from fat); 50g Protein;
34g Carbohydrate; 933mg Cholesterol; 2463mg Sodium


There pancakes sound good. I love a good pancake.

5 tbsp almond flour

1 tbsp sour cream
1 tbsp water
1/2 tsp baking powder
1 tsp cooking oil
1 pkt splenda
1 splash SF french vanilla syrup

Mix all ingredients. Spray skillet with non-stick spray and heat. Spoon
pancakes into pan (about 3) Cook on just under medium heat til one side
bubbles. Turn, cook for few minutes til done.

Serves 1 @ 7 carbs, 3 fiber (4 effective carbs), 299 cal, 26 fat, 34
protein.

I haven't made this yet but plan to this weekend after I find and clean off
my bread machine (somewhere in the garage?). From

White Bread

1/2 cup water
1/2 cup heavy cream
1 tablespoon oil
1 egg
1/4 teaspoon salt
1 cup high gluten flour
1/4 cup psyllium fiber (if your drug store doesn't have this, try a
health food store.)
1/2 cup oat flour
1/2 cup vanilla whey protein powder
1 package Rapid Rise Yeast

Put ingredients in bread machine in this order: Water, cream oil, egg
(slightly beaten), salt, gluten flour, oat flour, vanilla whey protein
powder, yeast. Set machine for Rapid Bake, if your machine has varying
cycles. (Dana's Note: Mine doesn't, but I have no problem baking low
carb bread in it.)

There are 60 grams of carb in the loaf, and 98 grams of protein.

If you try it before I do please let me know how it turns out

Well, without doing a google search, Farmers cheese is like crumbly cream
cheese, with less flavor, or more like a dryer cottage cheese, like
riccotta. My Mom used to use Farmers to make cheese Blintzes.

OK, I had to go check: Here's the definition:

FARMERS CHEESE

Cottage cheese is the fresh drained curds of slightly soured, low fat
pasteurized milk. When the curds are drained, the cheese is called cottage
cheese; allow the curds to drain longer and it is called pot cheese. Press
the remaining moisture out so it becomes drier and crumbly, and it is called
farmer's cheese.

It is strange, how I do a search for things and then I don't know what
Farmers Cheese is. lol Thanks for telling me what it is.
