Default Purpose of carby food after donating blood?

Why do they try to force biscuits and orange juice on us after donating

the
red stuff.
If I want to replace that with cheese squares and water, for example,

will I
suffer for it?

We got hard boiled eggs, with biscuits and orange juice.

From what I can gather, replacing fluids is probably more important. I have
given blood while low-carbing and had no problems. I had a small LC snack
beforehand, took my water bottle with me and sat there for a couple of
minutes afterwards sipping that while fending off the sweet biscuits and
juice they were offering, and then went back to work (which was just
upstairs so it wasn't exactly a long walk!)

I guess if you're normally prone to getting a bit woozy afterwards you might
want to accept a barley sugar or diluted OJ or something, otherwise you
should be just fine.
