REC: Cheesy Eggplant Sticks & Cauliflower Delight

I Found these recipes on the net sometime back and don't recall the author.

Cheesy Eggplant Sticks
1 regular eggplant
1/2 cup butter or margarine melted
1/4 cup grated onion
2 cloves garlic, minced
1 1/2 to 2 cups grated cheddar cheese(sharp).
Peel and cut eggplant into small wedges.
Place on ungreased baking sheet.
Mix butter, onion and garlic. Brush mixture on eggplant wedges.
Broil eggplant about 5 to 7 min. Turn. Brush with butter mixture again.
Broil 5 min. longer. Sprinkle with cheese.
Broil until cheese melts. Serve immediately.



Cauliflower Delight...
1 large head cauliflower
4 to 6 bacon strips
1 green pepper seeded
3 tbsp. chopped parsley.

Wash and remove the outer leaves of the cauliflower.
Put whole head in a pot filled with 2 to 3 inches of boiling, salted
water. Cover. Steam cauliflower about 15 minutes or until tender crisp,
not overcooked.
Meanwhile cut the bacon and green pepper into strips.
Saute' bacon until soft or crisp to your liking.
Drain and keep warm.
Saute' pepper in same pan with bacon drippings.
Place cooked cauliflower on a serving dish.
Top with bacon-pepper mixture. Sprinkle with parsley.
