Fresh Onions, Garlic and Green Beans work for me. Broccoli or cauliflower
or zucchini slices might also be nice.

Radishes!

Radishes are the #1 thing I put in with my pot roast. Larger ones I will
cut in half or cube, but mostly I just put them in there whole. They look
kind of like small red potatoes. Actually, the first time I did it, my
non-lowcarb eating husband thought they WERE red potatoes (this is after he
ate a plate with a pile of them on it). He hates radishes, but he sure
liked them cooked this way.

So radishes, celery, onion, baby carrots, mushrooms... that's what I add to
my pot roast. Very yummy.
