Back from North Carolina

Default Back from North Carolina

I've been down in North Carolina visiting the family down there (parents,
sister, brother-in-law, nephews, niece) and had a wonderful time. They all
live at the beach and I went for long walks every day. My dad's house is on
a street parelling the sound, and I walked along the street to the boat
landing and back every day. And I *ate*. Boy did I eat! We ate out many
meals, and prepared a lot of good meals.

Boy, I felt like I was being sinful I had no much to eat - but it was all
LC! Wonderful stuff like blackened salmon, fresh broiled bluefish, eastern
NC pork barbecue, shrimp and scallop scampi, homemade cole slaw, tossed
salad with pistachios and diced avocado, asparagus sauteeed in olive oil
with garlic and walnuts, chicken breasts crockpotted with mushrooms and
onions, green beans with almonds, "banana split" LC cheesecake, macadamia
nuts, asparagus with hollandaise sauce. And almost every morning for
breakfast we had the Hardee's Low Carb Breakfast Bowl (the Hardee's is
walking distance from my dad's house, though the Dunkin' Donuts is a tiny
bit closer, LOL).

But I certainly didn't feel deprived, and felt I ate like a horse. I got
home last night, and stepped on the scale this morning, and I weighed
*exactly the same* as I had weighed the morning I left. With all I ate I was
sure I would gain weight, even though the food was LC there was tons of it,
so staying the same seems like a major victory!

Where were you on the Outer Banks Debbie? There's a wonderful low-carb
grocery store in Kitty Hawk where I went with my cousin Linda a couple of
weeks ago. She's going back down there tomorrow. Linda lives just 30 miles
from there (in Elizabeth City, NC; I'm not far either currently in SE
Virginia. She's also an artist and has many of her paintings on consignment
in art galleries in Kitty Hawk and Nags Head).

Congratulations on holding the line and not gaining weight while at this
family gathering, that's an accomplishment!

I have two questions for you:

#1: What's "banana split" lc cheesecake? Hmmm? Enquing minds want to
know, and
#2 What is in Hardee's Low Carb Breakfast Bowl? This is news to me and at
work I'm 1/2 block from a Hardees!

It is 620 calories of eggs, topped with a sausage patty, topped with
cheese and ham and bacon - as best as I recall. It was pretty tasty
if you like alot of meat with your breakfast :P but I think they
should sell it at half the size. I think that it is big enough for
two people to share. See hardees.com for complete nutritional info
(although I couldn't find the actual list of ingredients.)

Recipe follows:
Debbie's Banana Split Cheesecake

Butter 13x9 inch casserole dish.
Heat Oven to 350 degrees

Crust:
2 cups almond flour, or well-ground nutmeal (40g, 24g fiber)
1/4 cup butter, melted
2-3 tbsp Brown Sugar Twin (2g) (Canadian cyclamate version, or use Splenda)

Filling:
1 1/2 lb cream cheese, softened (3 8 oz packages) (24g)
1/2 box of SF banana creme Jello-brand pudding (12g)
1/4 tsp banana extract (or a few squirts of DaVinci banana syrup)
1/4 cup heavy cream (1.7g)
3 eggs (1.8g)
1/4 cup liquid cyclamate (sweetener equal to 1 cup sugar) (0g)
1/2 *small* (6-inch) banana (12g - 1g fiber)
(if you don't mind carbs, recipe okay too without)

Topping:
1/2 small banana, *very* thinly sliced - and dipped in: (12g - 1g fiber)
1 tbsp lemon juice (.5g as you throw away most of it)
(*note* - again banana may be omitted if desired)
1 cup strawberries, very thinly sliced (12g - 4g fiber)
1/4 cup sliced almonds (4g, 3g fiber)
1 oz unsweetened chocolate (8g, 4g fiber)
1/4 cup butter
1 tbsp liquid cyclamates (sweetener equal to 1/4 cup sugar) (0g)

Mix ingredients for crust and spread out on bottom of casserole dish. I
usually need to do this with my hands which I keep wetting with water
to keep from getting sticky. Put casserole dish in oven while preparing
the filling. Should cook at least 10 minutes.

For filling combine all ingredients in a large bowl and blend with
electric mixer until very smooth.Remove dish from oven, pour filling into
dish and spread evenly across the dish. Return to oven and cook until
filling is firm and set in the middle, about 30-40 minutes but can be more
or less depending on your oven.

Allow to cool. When cool take the banana slices which have been dipped
in lemon juice and place evenly across the top of the cheesecake. Then
do the same with the strawberries. Sprinkle the almonds evenly across
the top.

Then melt the chocolate and butter together in microwave. I usually let
the butter melt first, then continue to stir until the chocolate melts
in the hot butter. You don't want the chocolate to burn. Add in the
sweetener. Drizzle evenly over the top of the cheesecake. Allow to chill,
then cut into squares and serve. May be served with whipped cream for more
of a Banana Split effect.
Total Carbs(without Banana):106 Fiber: 35g
With Banana: 130g 37g fiber)

Makes 8 *generous* servings

Net carbs per serving(without banana): 9g

Net carbs per serving (with banana): 12g

It is actually served in a plastic bowl and includes a sauasage patty, an
egg (possibly 2 eggs, I'm not sure), melted cheese, and crumbled bacon bits.

Wow, hard to believe that what we ate was 620 calories. It was *not* a lot
of food, and was barely enough to satisfy one person, let alone two. In fact
when we got them we had to either buy 2 for my mom, or else make her a
couple additional eggs, or a bowl or two of oatmeal to go with it.

But the photo of it shown on the hardees.com main page there looks like a
heck of a lot more food than we got. That picture shows it filling up the
bowl, whereas what we got barely filled up the bottom of the bowl.

I just visited the Hardees website, and I'm more concerned about the 1380 mg
of salt -- 1.38g! Think I'll pass on this gastronomical delight!

Sounds like you had a great trip! Including lots of eating! (isn't that
part of a vacation?) Best yet the scale stayed the same!

Hope your going to post some vacation pictures. I think I can safely say we
all like pictures.

Well, it's easy for me to pass it up since there are no Hardee's where I
live, or within a couple hundred miles of me probably. So I imagine having
3-4 of them when I visit my dad, once or twice a year, will not kill me. :-)
