Wow Lee, Those sound like fun ideas. I'll try that next time I make a
batch. Thanks for the idea.

Hi Rebecca,

I roast my own too, but I usually elaborate a bit. First, I whisk some
egg white until it's frothy, toss the nuts in that to coat, and then
toss them in a mixture of spices - whatever I'm in the mood for.
Sometimes, they're chili pepper nuts, sometimes they're curry nuts,
sometimes I make a mix of stuff. I'll add some salt and Splenda as
well, so they're spicy sweet. I cook mine at a lower temperature -
about 250° for about an hour, or until they're "dry". I mix 'em up
every 20 minutes or so, so they cook evenly.

Sprinkle 'em on a salad or just eat 'em.

or make them yourself. I buy them raw from the bulk section, go home,
put them in a single layer on a cookie sheet, and bake at 350 for about
10-15 minutes. Start peeking at them at about 10 minutes. There should
be the nice aroma of roasted nuts in the air, but don't let them get too
dark. No salt at all.

I also do this with pecans and walnuts, but pecans cook faster, so be
careful.

They are all good but need to be eaten in moderation. Read the nutrition
labels to see what best fits your plan. I like almonds and macadamias best.

My favorite are the Marcona almonds (large Spanish almonds which are
blanched, fried and then liberally salted; they're a little greasy)
and tamari almonds from Trader Joe's. They're highly addictive
however, moreso than plain raw almonds.

You're right, they are addictive. I'm so glad that I like them
relatively untreated. I'm finally to the point where the store-bought
ones seem way too salty to me.

Since I take nuts with me as an "on the go" snack, I am starting to
ration them... I put them into individual ziploc bags and just take
one bag with me.

Good idea. If I have the whole bag next to me, I can go through way too
many.

I also stop at Trader Joe's before going to the movies, and take a bag
of almonds and some high-cacao-index dark chocolate into movies with
me. I always "break the rules" and bring my own food with me,
otherwise I will end up eating my husband's popcorn and I'll feel
miserable the next day.

At the frequency with which I see movies in a theater (relatively
rarely), this isn't a particularly harmful cheat. I just wish more
theaters sold gourmet coffee; I'd be too conspicuous carrying a cup
from Peet's.

Yeah, why don't they get smart and invite the coffee franchise in? I
bet it would be quite a money maker.
