If you cholesterol is indeed high, you can try eggs from hens fed with flax
seeds, since they are high in omega-3 (which will reduce associated risk
factors) and pretty low in both cholesterol and saturated fats. If you like
near real old fashion farmers, you can also use their eggs if they feed
their hens the old fashion way (grain + worms), old times eggs used to be
lower in both cholesterol and sat. fats. If you eat any trans fats, that
might be a good time to cut them too... If your cholesterol is still high,
then you might have to consider more drastic measures, but only then...

Well, when low-carbing I'm not careful at all about anything but avoiding
carbs.

And when eating low-calorie I'm not careful about anything but avoiding too
many calories.

I just let the rest fall where it does and my blood values and blood
pressure and all that always seem ok, though I have to be careful of blood
sugar, apparently.

Eggs are both low-carb and low-calorie, so I usually have two poached eggs
for breakfast on cottage cheese. And sometimes I'll even pick up a couple of
hard-boiled eggs at the convenience store for a filling evening snack.

I haven't been eating meat the last couple of weeks (just fish) but only
because for the same volume of food fish has 1/3 - 1/2 the calories of meat.
I'm a bit worried about beef lately anyway, with all you read about with BSE
scares and antibiotics and stuff like that.

I'm curious. What else do you eat? Are you at all careful about other
sources of fat? What about meat?

I'm not Doug, but I've been eating 12-20 eggs a week too, for about a year.
I eat mine scrambled and I never seem to tire of them. Sometimes I have
bacon with them, sometimes I make them into egg salad, but usually just
straight scrambled eggs.
I find they fill me up and I'm good to go until lunch. I don't watch what
other meats I eat. Dietary fat is your friend.
I used to eat this way before i had gotten pregnant (and went off LC) and my
cholesterol had improved majorly. I'm due for some bloodwork soon so I'll
report back when I get it done.

Some of todays mainstream medical phallacies:

1) Dietary cholesterol = blood cholesterol

2) High cholesterol = heart disease

3) Dietary fat = bodyfat

4) 55 to 65% carb diet = good health

5) Pills will make you healthy

6) Diet isn't a concern when it comes to good health

7) Your doctor knows everything about diet

8) Pharmaceutical companies want you to be healthy

9) Low-fat/low-calorie diets work

I could go on for hours. It is amazing how screwed up the mainstream
is on diets and health.
