Default Savory Chicken In Peanut Sauce

Savory Chicken In Peanut Sauce

1-2 lbs chicken, cut into pieces to stir-fry
1-1/2 Tbsp. olive oil
1 onion, chopped
1 green pepper, chopped
1-2 celery ribs, chopped
1-2 cloves garlic, minced
1/4 cup peanut butter
1/2 cup chicken stock
1/4 cup honey (or use the equivalent of Splenda)
2-3 teaspoons curry powder
a pinch of cumin
salt to taste
chile-garlic sauce or hot pepper sauce, to taste


Directions

Combine onion, green pepper, celery and garlic in a frying pan with
olive oil. Saute until veggies are soft. Do not brown.

In a bowl, mix together peanut butter, chicken stock, honey, curry
powder, cumin and hot pepper sauce. Add chicken and coat well.

Cook until chicken is completely cooked on medium low heat. Serve over
Shirartaki noodles or shredded, cooked cauliflower.

Note: I have used cooked chicken in this recipe and it tasted just fine.

Whoa, propitious timing! I have some stir-fry I have to use or lose.
Also got most everything but the celery. Thanks for this!

Becca, just wanted to post that I did indeed make this for dinner, and
it was SO YUMMY I wished I had more chicken so I could make more!

Plus I got to use my new garlic twist, so that was totally cool.

I kinda eyeballed the sauce ingredients cause I didn't have much
chicken, and next time I think I'd make more sauce (more of
everything, really!) so I had some to pour over the finished product
and warm it up at the end.

So glad you enjoyed it. I posted those recipes, then I drove from my
house in Louisiana to Ohio, so I was gone for several days. I am glad
nobody had any questions, because I was not here. lol Again, I am
glad you enjoyed the recipe.
