Default REC: Vegetarian Salad

My best friend, who lives in California, is a 9 year vegetarian and a recently
converted low-carber. This is a favorite recipe of hers that she had to invent
based on "what was on hand" (they are having a grocery clerk strike in Southern
CA).

"auntie b's mock greek salad"

combine the following in a large glass bowl:
1 1/2 cups medium tailless shrimp (i thaw from frozen)
1 cup sliced asparagus (i thaw from frozen, sliced to
about 1 1/2 inch lengths)
1/4 cup finely chopped green onion
1/4 cup diced feta cheese

add:
3 tbsp extra virgin olive oil
3 tbsp red wine vinegar
several turns of fresh black pepper
two pinches kosher salt

toss and let marinate for about 1/2 hour in the
fridge.

when ready to serve, chop up a "spring greens" or
"herb salad" bag mix (too too convenient for words).
top salad greens with the marinated concoction!

its so amazingly yummy and filling.
feels like im cheating!

um - this sounds yummy for sure, but it's NOT vegetarian. Vegetarians don't
consume animal products - shrimp included. Even though there are lots of
people *calling* themselves vegetarians when they eat seafood, dairy, etc. -
there isn't a widely accepted word for this modified diet (yet).

Hehe, I know, that's why I said what I did (with the smiley attached)

I remember being a vegetarian and being told (during a hospital stay)
that this dinner is "vegetarian" because "vegetarians still eat chicken
and fish" LOL (Yeah, chicken and potatoes swimming in beef gravy,
reaaaal vegetarian *chuckle*)

I was a pain in their hineys when I was vegetarian because I kept
sending dinners back until I got what I wanted (a real vegetarian
dinner).

Okay, my mistake..she eats no other animals but fish. maybe not "vegetarian"
but still low carb.

Aren't vegans the ones that don't eat any animal protein??

There are more version of vegetarians that there are degrees of judaism
(no offense intended - please no flames)

Vegans won't eat any animal products, including eggs or milk products.
Often they won't even eat honey because the bees sometimes get killed in
the process of producing honey.

u can still eat fish eggs and dairy and still be vegetarian there are
different types i am a lacto ovo which means that i eat chicken and tuna as
well as some dairy but no red meat or pork or beef. i did for awhile but
being back on my diet i am no longer. i had to start eatting some red meat
because of low iron. anyway,

u can still eat fish eggs and dairy and still be vegetarian there are
different types i am a lacto ovo which means that i eat chicken and tuna as
well as some dairy but no red meat or pork or beef.


Sorry to be picky - but lacto ovo vegetarians eat eggs and dairy (as the name
implies) - but are NOT vegetarians if they eat fish and chicken. Yes, there
are a million variations on this theme and you can eat whatever you like - but
this is NOT vegetarianism. Maybe you can invent a term that covers this and
get it in use

It would be convenient to not have to hear everyone spout off their own
particular dietary quirks after they say "I'm a vegetarian, but ..."

Oh, and I thought I was a lacto-ovo-pesca-pollo-bovo vegetarian, because
I eat dairy, eggs, fish, chicken and cow, but all the other stuff is
vegetables, honest ;-) duck/run
