It's just the green peel, not the potato itself. I never had green potatoes so maybe that's why I haven't been poisoned yet. When I have had raw potatoes they're always peeled. I could see someone with a nightshade allergy getting sick though. They taste interesting raw, sliced thin, and marinated in malt vinegar for a while, but I think it's more of an "aquired taste." BTW, that Science of Cooking website is cool! I can't wait to show it to my students. Jenn |

Jenn The disaccharide carbohydrates in potatoes are not difestible for some and green fruits are difficult to digest. the same is true of raw potatoes.
