Pffft there's no recipe !
I made it big this time cause it was for two.. Here's today's version: 7 egg whites (cause I had 7 eggs left and didn't want one to stay all lonely n stuff) slightly whipped (just foamy, not snowy or anything) about... oh.. 1/4 cup thinkly sliced red onion 6-7 little cherry tomatoes sliced (makes like little rings of tomatoes, it's all cute) about... hummm... 1/4 cup for thinly sliced cucumber (english Cucumber) 3 BIG garlic cloves (was a bit much, but can't have too much garlic.. I luv the stuff) Dried herbs (oregano, basil, parsley) Kosher salt, freshly ground pepper Cooking spray In a small pan, I sauteed the onions a little, threw in the garlic, sauteed a little more, than the cucumber and sauteed some more. Took it off the fire, threw in the tomatoes. Add a little salt and pepper to it. Pre-heat the over at 350F (176-177 Celcius) In a bigger pan (I used my 10 inches Karahi, but I guess anything that can go in the oven is fine) I warmed up the pan at med-high and poured in the egg whites. I sprinkled the herbs and salt and pepper over the egg whites at the beginning so the flavors "cook in". I gave it time to start cooking (when it's white, but the top isn't set), then poured the vegetables over the egg whites trying to spread them around (don't stir cause you'll break up the egg white layer at the bottom!). I cooked the whole thing together for about a minute maybe, until it's almost set but the top is still giggly. Put the Karahi (or pan or whatever) in the over for 5 minutes, or until the pie is set (don't overcook, it gets rubbery!) Et Voila! In my usual version it's half, and I get the whole round thing in my plate so it's even cuter! I put whatever veggies I have on hand, or left over shredded chicken or whatever!
