Back in the day Dr Atkins phrased this as "One bite can hurt you". Many
have taken this statement to the opposite extreme and stayed lower in
carb than necessary. That tends to lower cortisol and cause bad moods.
That tends to cause tempation to cheat. It sets up a bad feeback loop.

Low carbing, like any other plan, is at best dynamically unstable. Low
carb for many is easy to stay on. That fact tempts people to think it's
hard to fall off. It never gets hard to fall off. And it stays hard to
get back on.
