Default Cooking Light "lighten up"

One of the thing I really like about my Cooking Light is the "lighten up"
part. Readers submit a recipe that they really like, and then the Cooking
Light team do their best to thin it out without taking out the taste.

This month, a Grandma wants her favorite dessert to be less fattening. Keep
in mind this is a very fatty dessert... original recipe was 428 calories per
serving, 25.6g Fat and 54% of the calories being from fat. New version is
265 calories, 8.4g fat and 30% of calories from fat!!! Still a 6pts treat
but... that's instead of 10!

Here's the Cooking Light version of it:

Ice Cream Treasure

6 oz Chocolate covered English toffee candy bar, crushed
8 cups reduced fat vanilla ice cream, softened
4 cups crispy rice cereal squares crushed (such as rice chex)
2 cups whole grain toasted oat cereal (such as cherios)
2/3 cup packed dark brown sugar
1/3 cup slivered almons, toasted
1/3 cup flaked sweetened coconut, toasted
2 TBSP butter, melted.

1- Stir crushed candy into ice cream, Cover and freeze until ready to use.

2- combine cereals, brown sugar and remaining ingredients in large bowl,
stirring until well blended. Press half of the cereal mixture in bottom of a
13X9 inch baking pan.

3- Let Ice cream stand at room temperature for about 20 minutes or until
softened. Spread softened ice cream mixture over cereal mixture; top evenly
with remaining cereal mixture. Cover and freeze 8 hours to overnight.

16 servings, Cal. 265, Fat 8.4g, Fib. 1g

not my kind of treat but I wonder if you could cut more calories if you used
the splenda version of brown sugar, and if you used the Icb light stick for
the butter? Lee

and I was just thinking, what if you used some yummy sugar free yogurt
instead of the ice-cream, Like maybe pinaqualatta or coconut cream? Lee

This concept is great if you are having a large gathering but if you
think it will stay in the freezer and you will be disciplined enough to
have no more than one portion every day or so my feeling is don't do it.
Desserts like this one can really trigger over eating for anyone who
loves sweets.
