Default 1st Day, Intro (longish)

Hi all-

Just thought i'd pop in since i have started my first LC day in almost 4
years. I was successful in the past with this type of lifestyle. I lost 30
lbs and maintained for 2 years. Then I had my 2 children, never lost all the
weight from #1, now have 45lbs to lose.

I have been in a carb and sugar nightmare for the last year! but I am saying
goodbye to all that and hope to be on my way to a healthy lifestyle and am
very eager to lose some weight!

It has to be easier for me this time, today was not-so-bad. Last time I
started LC i quit caffiene, smoking and sugar/high carbs at the same time!!
(and i was a pepsi addict and a 2 pack-a-day smoker!!) I have stayed off
caffiene and haven't smoked in all these years so now it's "just" the battle
of the carbs/sugar. I have a major problem in this area!

For breakfast I had 2 eggs, scrambled and only drank water. Lunch was
leftover roast chicken and some stringbeans, drank water. trying to drink
extra water today. I feel like I am hungrier/not satisfied when I drink caff
free diet soda all day! Then dinner was 2 cheeseburgers (no bun, of course)
with some raw onion (not much) and sauteed mushrooms, drank caff free diet
pepsi. I had some black olives, a pickle and american cheese for snack at
3:00.

I usually get very hungry at 3-4:00 and eat everything i can get my hands
on - so i was pleased with myself for sticking with it on day 1. I have to
go find a recipe for those cheese "crackers"...

I weighed in at 166lbs and will weigh in again next tuesday. i am going to
TRY not to step on the scale again until then.

You are all quite an inspiration, I hope this newsgroup can help keep my
focused on my goal: to get fit anf healthy for me and for my children!

Hi Joanna! Welcome to the Good Ship Celerystick!

Did you know that a low-carb diet provides you with insufficient
carbohydrates to allow your brain to function normally? It gets all weird
and squishy and stuff.

Well, that's my excuse.

Get some "deluxe" American cheese (not the kind labelled "cheese food"),
tear into pieces and put on parchment paper (not wax paper, they will
never come off) or on a plate or pyrex dish sprayed with non-stick spray.
Microwave until bubbly and starting to brown. They will crisp as
they cool. I've never gotten around to trying the parchment paper,
I use a pyrex pie pan.

The plastic that individual slices are wrapped in is supposed to be a
good surface to cook them on, but down here I've never found the deluxe
kind individually wrapped.

Other kinds of real cheese can be used -- they will release a lot of
oil and eventually crisp, but American cheese is the only kind that
makes puffy chips. Some people prefer to fry up shredded cheeses in
a non-stick skillet.
