Hey, I had a creamcheese omelete myself this morning. With hot salsa.

I throw some thawed frozen blueberries in with the cream cheese. It's
like eating a blintz. (I think I got that idea from someone here.)

I prefer cream cheese and chives.

This is also the one omelet type I prefer with egg white, rather than
just whole eggs. The egg white makes it fluffier and less flavorful, so
the cream cheese and chives are not overwhelmed.

I beat 2-3 egg whites until frothy, then mix in a whole egg and a TB or
two of cream. Fry a couple TB of dried chives in a TB of butter over
medium heat until you smell them a bit, then add the eggs. Once it's
the eggs are cooked through, stick a few slices of cream cheese in the
middle before folding over.

I made one for lunch today with mushrooms and goat cheese. 3 eggs
beaten with a couple T's of water, a little dill, salt and pepper,
poured into a hot pan in which a little butter had melted with some
olive oil. Filled with sauteed mushrooms and goat cheese. Rolled out
of pan and onto plate. Veddy good. I'm home sick with a nasty sore
throat and this lunch with a cup of tea went down nice and easy when
nothing else sounded good. Thanks for the inspiration.
