How much xanthan gum do you use? on Mon, 17 May 2004 17:34:53 -0500, Damsel in dis Dress wrote: I can't agree enough, PoohBear! We love the stuff, too. We thicken it with xanthan gum to give it a little body, but the flavor is absolutely perfect! Thanks again, Jenny! I have absolutely no idea. I tend to cook by feel, and that's what I did in this case. Sorry I can't be of more help. Next time I make a batch, I'll be sure to measure. So much depends on how thick you want it, so it's hard to come up with a one-size-fits-all amount. Sorry, Carol |

Thank You, Jenny, BBQ Sauce Queen
I have always dreamed of being a BBQ Sauce Queen and now I have finally
achieved it! G The sauce keeps for months in the fridge. It has a lot of vinegar in which is a preservative it so it's like ketchup. For the record, my sauce is a modification of Brenda Laughlin's sauce which was published in a "Cooking Low Carb" cookbook written to benefit PCOS. That recipe was posted on this newsgroup years ago. I have modified it slightly, but Brenda should be credited with the basic idea. Here's a link to the cookbook which I own and which has quite a few excellent recipes: http://www.cest-bon.com/cookbooks.html -- Jenny - Low Carbing for 4 years. At goal for weight. I was a little hesitant to try this because my husband had his own homemade recipe. We are both very discerning when it comes to taste. After reading so many other posters comments about how good your BBQ recipe was, I decided to go ahead and make it, My husband said this was the best he had ever tasted! He raved about it to our neighbor, who tasted it and also wanted the recipe. Folks, anyone looking for an incredible BBQ sauce, TRY THIS ONE! You won't be disappointed! Jenny, THANK YOU for posting this recipe to our group. PoohBear |

Jenny, I actually doubled the recipe and froze it in two seperate bowls and put them into the freezer for about a month or two. Then I defrosted them and used them on pork ribs---------------incredibly awesome taste. So I would say that it can be frozen. PoohBear |

No need to apologize! My mother cooks the same way and she's an excellent
cook. Unfortunately, I take after my father and I'm one of those "anal" types who has to measure EVERYTHING. :-) on Mon, 17 May 2004 23:02:33 -0500, Damsel in dis Dress wrote: I have absolutely no idea.
