easy corned beef hash experiment

Default easy corned beef hash experiment

I'm quick and easy when it comes to cooking. So this morning I tossed a
turnip, a couple of parsnips, and a chunk of onion into the processor until
I got something resembling raw hash browns. Browned them in bacon fat,
added a can of corned beef, cut into chunks, that crumbled as I stirred it
into the "potatoes", and served it with fried eggs on top...it made enough
for 4 people so after hubby and I ate, we have enough to warm up (with fresh
eggs, obviously) tomorrow.

Works great with rutabagas aka swedes also. I tried jicama once
and it just didn't cut it.

Works even better with leftover roast beef, pork, lamb, whatever.

Have never had a rutabaga yet...but did overdo on jicama a couple of years
ago, got collywobbles - BAD. Haven't had it since...

Leftovers? What are those? G

Actually I cook so there are no leftovers, just a serving for each of us in
the fam...so no overeating, or taking seconds just because it's there, or
whatever...

BTW - great deal on meat. Usually I stock up on meats when they're on sale
but a local meat market had a 45# variety package of meat - beef and pork
steaks, chicken breasts and leg quarters, "home-made" sausage, bacon, big
fat chops...turned out to be 47.62# in the end, for $74.95. That was pretty
nice! Put it in the freezer with the 7# of ground beef I bought yesterday
for $1.39/lb and we're set for meat for the month...cheap!

I've made corned beef hash by substituting cauliflower for the potato
and it worked very well. I've also made mock potatoe salad using
them.

One thing I've found rutabagas excellent with is fish. I puree and
process the rutabaga similar to how you would make mock mashed
potatoes from cauliflower. After boiling the cut up rutabagas until
soft, I puress them, add some cream cheese, veg bullion, pepper. I
then use that as a base on the plate underneath grilled fish. The
slightly sweet taste of the rutabaga just goes very nicely with the
slightly smokey grilled fish.

I will have to try the rutabagas, I was going to ask how their taste differs
from other root veg but you mention "slightly sweet", and I can see a use
for that also. Just did my grocery shopping yesterday for the next 2 weeks
but will get a couple next time and give them a try also .
