Default Which is better Zanthan or Guar gum?

I just started looking around for this stuff to use as a thickener,
and my store has them both; guar gum is like $2.79 a pound and Xanthan
is like $5 for 4 oz. Usually more expensive is better....but you
never know.
Anybuddy that used these products can give me an idea please?

No difference from my point of view, I have used both and they are quite
similar.

I've use Xanthan all the time as a thickner for gravy and similar. A
little bit goes a very long way. The above prices seem a bit unusual,
ie too little for the guar gum and too high for the xanthan.

Xanthan is expensive, but it lasts a long time. If I make a bottle of
salad dressing, it only takes 1/8 of a teaspoon, or less, of Xanthan to
thicken it. I shake it up, refrigerate it, and the salad dressing is
nice and thick.

recipe please?


Sure honey, no problem. I change these recipes all the time, please feel
free to do the same. I did not include the xanthan gum, since some
people do not like thick salad dressings. I like them thick, on
cucumber salad, especially.

For these recipes 1/8 teaspoon of xanthan gum is plenty. After the
salad dressing chills, it should be plenty thick enough.


Greek Salad Dressing

1 cup extra virgin olive oil
1/3 cup fresh lemon juice
6 cloves garlic, minced
2 teaspoons dried oregano
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
Splenda to taste

Mix well and chill.



Creamy Cilantro Dressing

1 cup mayonnaise
1/3 cup milk
4 t minced cilantro
2 t lime juice
1 t vinegar
1 packet Equal
1 t finely minced garlic
1 t finely minced onion
1/2 t salt
1/8 t cayenne pepper
1/8 t black pepper
1/8 t cumin

Whisk ingredients together, cover, chill.



Olive Garden Salad Dressing

1/2 C. Mayonnaise
1/3 C. White Vinegar
1 tsp. Vegetable Oil
2-3 packets of Equal or Splenda
2 Tbsp. Parmesan Cheese
2 Tbsp. Romano Cheese
1/4 tsp. Garlic Salt - or one clove garlic minced
1/2 tsp. Italian Seasoning
1/2 tsp. Parsley Flakes
1 Tbsp. Lemon Juice

Mix the ingredients. If this is too tart, add more Splenda.
