Default substitute for a birthday cake?

Silly question. But what do people on low carb diets do with friends on a
birthday?

i eat a small piece of cake, if it's a type of cake i like. if it's
not, i don't have any.

For Mother's Day, we made the famous almond flour pound cake. The flavor
was okay, but the texture is nearly identical to that of corn bread.
Although I haven't tried it, Myra's cheesecake is very popular here. You
can actually use any filling. It's the almond flour crust she developed
that is special.

I'll post both recipes for you.

Classic Almond Flour Pound Cake

Recipe By :Low Carb Luxury
Serving Size : 12 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 ounces soft butter
1/2 cup cream cheese -- softened
1 cup Splendaź granular
5 eggs -- at room temperature
2 cups almond flour
1 teaspoon baking powder
1 teaspoon lemon extract
1 teaspoon vanilla extract

Cream butter, cream cheese and Splenda well. Add eggs, one at a time,
beating well after each. Mix almond flour with baking powder and add egg to
mixture a little at a time while beating. Add lemon and vanilla extracts.
Pour into greased 9"-10" Springform pan, ring pan, (or 9" round cake pan)
and bake at 350°F for 50-55 minutes. If using a glass or dark-colored pan,
reduce heat to 325°F.

You can change flavors for this cake by using different extract flavors and
even food color if you like!

Makes 12 servings. 6.1 effective grams of carbohydrate per serving.

Myra's New York-Style Cheesecake

1 1/4 cups finely ground almonds -- or other nuts
1 tablespoon Splendaź granular -- optional
2 tablespoons melted butter
---Topping---
2 cups sour cream -- (16 oz. container)
1 teaspoon vanilla
1 tablespoon Splendaź granular
---Filling---
24 ounces cream cheese -- softened
1 cup Splendaź granular
4 eggs
1 teaspoon vanilla

In a bowl, combine the almonds, 1 tablespoon sweetener and melted butter
until combined. Press into bottom of a 9-inch springform pan. Chill in
the refrigerator at least 15 minutes.

In a bowl, mix the sour cream, 1 teaspoon vanilla and 1 tablespoon
sweetener until well combined. Cover with plastic wrap and refrigerate.

In a large bowl, beat the cream cheese and 1 cup sweetener until fluffy.
Add the eggs, one at a time, blending well after each addition. Blend in
the remaining 1 teaspoon vanilla.

Pour the cream cheese mixture into the springform pan, and bake at 350
degree for 50 minutes, or until a knife inserted halfway between the edge
and center comes clean. With a spatula, spread the sour cream mixture over
the top, making sure you reach to the edges of the pan. Return cake to
oven and bake an additional 5 minutes.

Remove cake from oven, allow to cool to room temperature (cake will settle
in the pan). Slide a knife around the edge of the cake to loosen it, then
remove the springform ring. Keep chilled in the refrigerator.

Makes 16 servings, about 5 grams of carbs per serving if made with almonds

Oh, and I developed a couple recipes for very low-carb cookies, if it will
be a casual get-together. The first one has .6 carbs per cookie. The
second has 1 carb per cookie. Here are the recipes:

2 1/2 cups almond flour
1/4 cup Splendaź granular
8 ounces soft butter -- (2 sticks)
1 large egg
4 teaspoons lemon extract
1 1/2 teaspoons xanthan gum
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup lemon zest -- (one large lemon)

Cream the almond flour, Splenda, and butter until well mixed. Stir in egg
and lemon extract. Add xanthan gum, baking powder, salt, and lemon zest.
Combine well.

Drop by teaspoons onto an ungreased cookie sheet. (These cookies do not
spread when baked, so they can be placed close together)

Bake at 350F for 12-15 minutes. Remove to a wire rack and allow to cool
thoroughly. Store in an airtight container to retain soft, chewy texture.
They dry out quickly.

As with most butter-based cookies, these taste better the day after baking.

VARIATION:
Use orange extract instead of lemon, and use orange zest instead of lemon.

1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts

Cream the almond flour, Splenda, and butter until well mixed. Stir in eggs
and vanilla extract. Add xanthan gum, baking powder, salt, and nuts.
Combine well.

Drop by rounded teaspoons onto an ungreased cookie sheet, about an inch
apart.

Bake at 350F for 15 minutes. Remove to a wire rack and allow to cool
thoroughly. Store in an airtight container.

VARIATIONS:
Omit nuts and add unsweetened coconut or orange zest.
Omit vanilla and use vanilla, orange, peppermint, or raspberry extract to
taste.
Omit nuts, dry and crumble cookies and mix with melted butter to form a
cheesecake crust.

Singing is low carb.

If it's your birthday...

Smile, blow out the candles and ask them why they didn't bake you an LC
cheesecake.

Then take one representative bite of one birthday cake and have a great
year.

someone is going to tell you that's rude, but.. well.. singing and smiling
isn't.. asking why they didn't make a low carb cheesecake *might* be but
then again, if they are really friends, they should already *know* you might
not want *real* cake.. i think it would be more rude of THEM to bring
something like that expecting you to eat it!

a) Wake up to the fact that the birthday is not about the cake.
Pass on the cake and enjoy celebrating with your friends.

b) Plan on eating the cake, expecting a small set-back on the
scale, and expecting to fight cravings for a day or two.

c) If it's your own birthday, plan a low-carb cake, keeping
in mind that low-carb junk food is still junk.

Pick one.
