Default Thanks for pumpkin cheesecake

A short while ago somebody posted "Kitty's Pumpkin Cheesecake" and I just
wanted to say, it's great! Even better than pumpkin pie.

The recipe says 8 servings, but I used a muffin pan with paper liners and
no crust, so there are 12 servings, each with about 2.2 grams usable carbs
and 115 calories. Wow.

KITTY'S PUMPKIN CHEESECAKE AND VARIATIONS

Recipe By :
Serving Size : 8 Preparation Time :3:30
Categories : 0-5G Low Carb Dessert Cheesecake Baked
Znew2001

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 eggs
1/2 lb cream cheese -- 250gr
3/8 cup splenda
1/3 tsp maple extract
1/3 tsp vanilla extract
1/2 can pumpkin
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/4 tsp Lite Salt

Carbs:3.3 Fib0.5 Protein:4.6 Fat:11.9 Per Serve

Blend all ingredients in blender until liquefied. Pour into 9" 230mm glass
pie pan.
Bake at 375 degrees for 30 minutes or until it tests done with a knife. Let
cool; enjoy!

Some variations:
Double the recipe (only if you have a BIG food processor or blender!) pour
into a deep dish pie pan and bake for 45 minutes (or tests done)
Place a layer of pecan halves on the top before putting in the oven.
Top with low carb whipped cream (decadent!)
And if you can't find the fancy extracts, just use 1 tsp of vanilla. But,
since I'm from New England originally, you HAVE to have maple!
