Default Camping food

I hope to do several long hiking trips this summer in the UK and Europe and
I need some advice on foods to take. Traditional low weight hiking food is
dehydrated but is mainly pure carbs so I need some alternatives. I guess I
will have to carry 5 days supply with me at anyone time if it is food I can
buy locally. Obviously if I have to prepare the food at home first I will
have to carry it all with me, approx 10 days worth.

Any help appreciated. Adam

As a Scoutmaster for our local troop, and one who's been trying to stick
with a LC WOE, I've got some experience with this. One of the easiest
things to hike with are the tuna packs that you can now find in most
supermarkets. Find some mayo packets and you've got it made. I've also
found that cheese kept in an insulated bag works, as does hardboiled eggs.
Hotdags also work - but you need to keep them cool. You should be aware
though, that the extra energy required to carry a backpack while hiking
means you can consume some additional carbs. I've tried to keep it limited
to nuts.

Jerky and summer sausages. Sausage have more fat, and therefore
will provide you with more calories. Make sure you buy sausages
that keep at room temperature.

Nuts and trail mix.

I am glad you brought up this topic. I like to camp (car-camping, not
grueling week-long hikes like you) a few times a year and I'd be
interested in some ideas others come up with.

I guess I'd make a bunch of beef jerky (dried beef), and since I have
a cooler at camp I'd bring cheese, turkey/chicken breast meat, mayo,
cream cheese, romaine lettuce leafs, pork rinds ... if I was already
or near goal weight I'd probably also bring some apples and
nuts/seeds.

I suppose I could eat high carb foods for the time I'm away. I guess I'll be
burning lots of calories but I'm concerned about the impact of high carb
food after 14 month with very few.

The very few times I've eaten bread or rice (usually cooked by well meaning
friends) I've had bad stomach problems and felt bad for a day or so after. I
want to enjoy my time away so I'll try to low carb. I really want to get
away from civillization and be self sufficient for as long as possible, but
this means carring all my food with me.

BTW what are summer sausages?

An American friend of mine has suggested something called pemmican which is
apparently made from beef. I've found a few recipes but it doesn't look very
appetising!

Any nut would be high in fat, some carbs, and some fiber.
