Default Food Poisoning Diet

I was the unfortunate victim of food poisoning from a Memorial Day picnic.
The good news is I lost a few pounds! But I was wondering what you strict
LCers eat when you get sick like that with diarrhea/vomiting?

I didn't eat anything the first couple of days, but when it started to
lighten up I relied on the BRAT diet of bananas, rice, apple sauce and
toast. I couldn't think of anything low carb to eat that would be easy on
my stomach except for cottage cheese, which is dairy & something I just
didn't want. I didn't want to eat dairy or anything fatty/greasy.

I'm sure your responses will be so obvious I'll feel like the world's
biggest idiot, but I'm curious.

Thanks,
Julie

I generally use plain chicken broth, lightly shirred/poached eggs, or a
combo of the two. You can make a simple "egg drop" soup that is delish'
by bringing the broth to a boil, whipping the eggs well and pouring it
slowly into the boiling broth while stirring.

As you recover, add a bit of heavy cream to that to make a thicker cream
soup.

Yes, cottage cheese works too! :-)

I hope you are feeling better! Riding the porcelain pony whilst hugging
the trash can is not a fun time. :-P

Cheers!

Scrambled eggs w/ cheese. Mild on the stomach, protein and low-carb.

Unless you are a diabetic, a high carb diet is fine if you do not
overeat. I would not worry terribly too much.

And even if you are a diabetic, it can be fine for some/many to
occasionally (and carefully) eat high carb in order to recover from an
acute illness. I regard it as an opportunity to enjoy a bowl of
steaming white rice or some lovely banana. It makes the illness into an
occasion for treats and can be cheering. ;-)

Not low carb, but:

mashed potatoes with or without creamy gravy
creamy gravy by itself
cream of chicken soup
gran's chicken and dumplings...specifically the dumplings

anything else would make me sick, including water (hot or cold,
it would upset my stomach).

When I'm sick, I just eat whatever I feel like and don't worry too much
about it. If you feel like some chicken soup, it really isn't going to
make much difference in the long run if you have a few bowls of it,
whether it's lower carb with vegetable or has some higher carbs from
noodles or rice.

Egg custard (makes 4 servings)

o two whole eggs
o two egg yolks
o 2 cups (16 oz container) half and half
o 2 1/2 - 3 tablespoons Splenda
o two teaspoons vanilla extract
o 1/4 teaspoon cinnamon
-------------
o Preheat oven to 350 degrees

o Beat eggs and yolks lightly, then mix in all remaining ingredients
except cinnamon

o Pour mixture into four glass custard cups/ramekins, sprinkle
cinnamon on top

o Set in baking dish, then add one-half to one inch of water to dish

o Carefully put in oven and bake at 350 degrees 30-35 min or until set

Cream can be used instead of half and half and will give you a modest
carb savings, but it sure will increase the calories.

I eat nothing as long as I am vomiting. It just doesn't make sense to eat
when stuff is coming back up. My doctor has always said not to eat anything
for about two hours after vomiting. I don't always wait that long to drink
something but do wait until I pretty sure its over, then its usually just
water or SF sprite for a while. Eating solid food doesn't start again until
its been stopped for several hours. I see someone suggested egg custard -
that wouldn't work for me. I can never eat anything containing any quantity
of milk after I have been vomiting or when I have a fever. It will sour on
my stomach and create a gosh awful mess.

As for diarrhea I am pretty cautious with eating when I have that as well.
Usually broth and clear fluids for a while then depending on how long it
lasts and what my blood glucose is I may switch to soup or add in bland
foods which often do contain carbs such as small amount of toast or bread,
oatmeal (no milk) or baked potato (no butter). Not good for your LC diet but
easy on the digestion.

Debra
