Default what's for lunch?

Yep, what's for lunch? I usually eat at home and I will welcome
suggestions for low point lunches that are easy to prepare.
Reviewing my journal I notice that I very often resort to peanut
butter and fruit spread on high fiber bread. I like PB but this
is too repetitious. Also, pb is a bit high in points. I need a
few new ideas to liven up my meals. Thanks. PAT in VA/USA

Default what's for lunch?

I have a few different lunches that I rotate through. Although I'm quite
content to eat the same breakfast almost every day for months at a time, I
must vary my lunches or I go crazy. Most of my lunches are 5-6 points. Today
I had 1 c. chili with 1/2 peanut butter sandwich for 6 pts.

Chili Potato 5.5 pts
1 med. baked potato
1/2 c. Hormel vegetarian chili
1/2 oz 2% shredded cheddar cheese
1 T reduced fat sour cream
scallions

Black Bean Burrito 4.5 pts
1 flour tortilla, medium
1/2 c. black beans (drained, rinsed, microwaved until hot)
1/2 oz 2% cheddar
1 T. reduced fat sour cream
salsa

Cheeseburger 4 pts (plus 1 pt of pretzels or baked potato chips)
Boca Burger
whole wheat bun (the brand I use is 2 pts.)
slice of 2% American cheese

"Ham" sandwich 4.5 pts
3 slices Lightlife Smart Deli Ham-flavor slices
2 slices high-fiber bread
1 T. lite miracle whip

Yeah, I know you're not a vegetarian, but maybe this will give you some
ideas. During the summer, when fresh, yummy tomatoes were available, I also
ate hummus on pita with lettuce and tomato, for 3 pts. Or tomatoes with
cheese on bread.

I recently enjoyed a half can of Progresso Bean Soup, 2 points.
Sprinkled some grated cheese on top, 2 points worth and had carrots.

Good question, I often resort to the same thing Pat so I'm looking
forward to some ideas.

Default what's for lunch?

Today its left overs from the freezer. Pastas with diced chicken
breast zucchini and carrots all lightly strifried ( 3 tsp oil for 4
portions) with oil, seasoned with chilli powder and paprica. Yum yum,
at 4 points a serving this is a hit and it reheats really well. Will
post the exact recipe if anyone wants.

Some of my favorite lunches are...

Smoked salmon, capers, red onion, olives, cottage cheese (or cream
cheese if you've got the points - it's 2 points per ounce, like most
cheese). Oh, and Kavli thins (rye crisps) or Finn crisps.

Hummus, pita bread, dill pickles.

Leftover chicken with Frank's hot sauce. Cut it up and roll in
lettuce.

Most of the time I just graze on leftovers, and that's a lot of
variety.

I had zero point carrot and coreander soup and a big hunk of ciabbatta
bread: 6 points! The bread was a home-bake, and had sun dried tomatoes
and herbs in it. No butter...

Soup or salad is good. There are many lunchmeats and sliced cheeses
available for 1 point. This allows some really great sandwiches for 2-3
points. I make mine with lots of mustard, lettuce, pickles, tomatoes with
raw vegetables and dip on the side instead of chips.

I have been eating a delicious chicken wrap for lunch.

1/2 Fat Free wrap (mine are rectangular-ish and large - they are found near
the deli)
layer of lettuce or I use baby spinach
1 serving of Perdue Chicken cuts (in the meat dept) I use the southwestern
flavor, yum!
diced tomatoes, mushrooms, whatever 0 point veggie you want to add
1 serving of your favorite dressing - I use a Fat Free Caesar Italian

roll it up and have a fork ready for the stuff that falls out - this is
very filling and it's only 5 points. In fact today I'm going to use half
the chicken and half the dressing (it spills out anyway) for a 3.5 point
meal!

I'm loving all the lunch suggestions!
