Carol, I'm a bit confused as I don't see any flour in this. Is it
more like an omelette rather than a pancake?

It will be a pancake as niut butter is the same as nut flour. It just
becaomes thick and more liquid when processed longer. Try the recipe
and you will see.

If I skip exercises, blame it on the lowly peanut.

One of my favorite breakfasts is a peanut butter pancake, (One egg and
one tablespoon peanut butter plus a pinch of baking soda).

After a long night of watching the polls (most of which I did at the gym
), I decided I needed to try this. WOW! Absolutely delicious! Thank you
for posting this... I had one pancake with some cooked blueberry topping and
I feel full! This will definitely become a breakfast favourite for me.

Do you have the Pilates tapes? I have some but have never used them
They hold some Pilates sessions at the gym but they don't currently
fit into my schedule. I've heard several people say they think it
increases their flexibility. Have you found this true?

I know you asked Carol, but I love Pilates! I always feel so relaxed and
limber when I'm done and I'm sure it helped my back get stronger. I have
the Winsor tapes.

PS: I'm looking for a bike! G

Those are the tapes I have. I'm going to have to make time for them.

Too bad you don't live closer. I have a garage full of bikes and need to
get rid of a few - but I'm having a hard time parting with any of themg
Maybe I'll just build an addition of the shed in the backyard.

Carol:

Haven't seen you for a while. Peanut butter is one of my favorite foods.
Could you go into a little more detail about how one goes about making your
peanut butter pancake? Sounds like a South Beach treasure.

Since PB is calorie dense, I don't keep it on hand all the time but
when I do a big conflict always arises.

Exercise is before breakfast. But there have been times when I wanted
that PB pancake so badly that I put off the Pilates until later, which
never came.

This morning, exercise and a hot shower made me feel I now deserve that
fresh squeezed organic orange juice, fluffy PB Pancake and tall Allegra
freshly ground coffee (the Whole Foods House brand)with a dash of
vanilla and cinnamon. Besides, I'm stalling. Today is election day in
Canada and many of us will be undecided until the polling places open
at 9:30 a.m.

I'm voting for whoever supports the peanut farmers!

It is actually something for my Specific Carbohydrate Diet used for
Celiac Disease.

Use an electric hand blender or just stir the ingredients or use an
electric egg beater. I sometimes add a dash of vanilla and cinnamon to
the egg, peanut buter and poinch of baking soda.

Use a non stick pan or a heated skillet with a pat of butter added.
Pour in the batter, brown on one side, turn over and brown the other
side. It's so simple. I pour honey on it.

This may sound calorie dense and low carbers will not like the use of
honey but I am currently on maintenance and because I do not use
disaccharide carbohydrayes need some source of carbs to avoid ketosis.
