Default 2 pancake "mix" reviews....

Ok so with Induction ending Saturday I took it upon myself to try two LC
pancake recipes as a reward (one per day). The contenders: Atkins Pancake
Mix (not the Deluxe) and Jenny's "Better than the Boxed Stuff Homemade Low
Carb Pancakes" (http://geocities.com/jenny_the_bean/recipes.htm).

Atkins Mix-----
Cost: 5.99
Serving Size: 1/4 cup, about 4 medium pancakes (but size is relative ;-)),
there are 10 servings in the package of 9 oz.
Carbs: 6g -3g fiber = 3g Net Carbs
Results: Mixes fairly easily, cooks just like regular pancakes and tastes
pretty darn close. Moderately fluffy, slightly sweet taste that goes well
with butter and/or SF syrup.


Jenny's BttBSHLCP ;-) ----------------------

Cost:
varies per whey protein used, I used Precision Engineered Vanilla from
Vitamin World (www.vitaminworld.com but I found a store near me); 13.99
with their free member's card (obtained by spending $20 the first time you
shop. I bought the protein at 22.99 + some supplements at 9.99 and then they
apply the card, etc. VERY cool).

Serving Size:
varies, but roughly 2.5 tbs protein + 3/4 teaspoon baking powder. Container
is 32oz, so that's something like 64 tablespoons so let's call it 25
servings ;-) Makes 2 fairly large or more smaller pancakes. I made two
large-ish silver dollars and had enough left to make some waffles in my new
waffle machine ;-)

Carbs:
varies per protein; with her recipe using the P.E. it comes out to 1g per
"serving".

Results:
Pancakes came out very soft and texture is much like the Real Thing. They
didn't seem to be quite as fluffy as the Atkins Mix, but my griddle also
sits on an incline and the mix kept dripping down so this is most likely my
fault ;-) The Vanilla flavoring of the P.E. plus the vanilla (or whatever
you choose) of the DaVinci/Atkins syrup makes for really good "built in"
flavor as well. See Notes below for more info.

Notes
The first time I used ISOPURE Zero Carb protein mix. BIG mistake. The stuff
is so thin it practically disappears in water and made for stiff crunchy
pancakes; granted I could have also just mixed the stuff up wrong but I
don't think so (someone correct me if they had better luck). Following
Jenny's tip and getting the P.E. made a HUGE difference (not to mention it's
way cheaper). I noted that the ISOPURE wants something like 10oz of water to
make a shake, wherease the P.E. wants 1/4 cup, so that probably speaks a bit
to the difference.


Overall--------------
The winner? Based on cost and the ability to experiment with the
ingredients, I think I'm going to lean towards Jenny's recipe. It also has
fewer carbs (even if you don't do the "net" trick). The flavors and textures
were close enough that I don't think I'd miss getting the "official" Atkins
mix. Next quest is to make up a large batch and freeze the waffles/pancakes
that can serve as quick breakfast treats to break up the egg/bacon/sausage
monotony.

I only hope they are legal enough to enjoy on my
pseudo-post-Induction-but-not-quite-OWL ;-)
