Default LC Macaroons = YUMMMM

Just whipped up a batch of the LC Macaroons to take to Thanksgiving dinner
tomorrow. They are YUMMMM. Have to be careful - could easily eat many in
one sitting : (

I am in the process of making twice baked cauliflower and the No-Bake SF
Pumpkin Pie. I will report the results.

I googled them. Try "Myra's LC Macaroons", "SF Pumpkin Pie" and "Twice
Baked Cauliflower". That should get you the recipes. (sorry - threw the
recipes away already)

I'm waiting for my pumpkin pie to set. Probably have a piece about 10pm.
I used the suggestion of making it with heavy cream and sweetener. (I
used splenda)

I went with the no crust option, so it's probably more accurately a
custard than a pie. shrug

1can of pumpkin has 3.5 servings x 6g, splenda has less than 1g per
package, (I figure about 15g, wish I had the 0g bulk stuff)

Heavy cream says 0g and the spices added up to one tbsp. so maybe a
trace there.

(3.5 x 6) + 15 + 1 = 37g total for dish.

37 / 6 = approx. 6.2g per serving.

I'll let you know how it tastes. GRIN

p.s. The scale said 299.8 lb. this afternoon. I'm officially claiming
that I've reached the 300 lb. mark!

Thanks... Re-checking the printout just after sending that post I
noticed that it was actually 299.6. This was a couple hours after
lunch. so I'm even more solidly sure I'm at the 300 mark.

We'll see what Turkey day does to me. chuckle

The pumpkin pie (custard ;-) tastes great. I thought it was a little
sweet, but others not on LC thought it was just right. It could have
cooked just a little longer, but the texture wasn't too moist.

I didn't put anywhere near 3/4c of splenda in. In fact it was like 1/12c
or so. It seems to me that splenda tastes many times sweeter than sugar
per volume in recipes. Anyone else notice that?

LC pecan.............. I'll work on that. I do like pecan pie. g
