Why melt chocolate? Why not use unsweetened chocolate powder?

I would imagine the cocoa butter content in the unsweetened chocolate
(I'd use chocolate liquor) makes for a richer fudge consistency. Cocoa
powder (is that what you mean by chocolate powder?) wouldn't help the
consistency of the fudge.

I use some real butter too.

Yup. I'd add some butter to the chocolate while it's melting, to
prevent it from siezing.

best yet !

Best Fudge

Lightly butter two small ramekins or use 4 small paper candy cups.

2 oz cream cheese mix these together

1 tsp vanilla

2 Tb cream mix these together

6 splenda packets

1 oz unsweetened bakers chocolate - Melt chocolate in top of double boiler,
remove from the heat and let it cool off.

Quickly stir in the cream/splenda mixture, then whip in the cream cheese
mixture with a rubber spatula. Spoon into cups and refrigerate.

I think you mean 'ganache'. Goulash is an entirely different dish
(usually served over noodles).

A small baking dish, usually with straight up sides.

It's a little ceramic, round straight-sided pudding cup...think
souffle dish but in a mini size. Probably holds about 1-1.5 cups of
liquid.
