Default Crunchy Coconut Chips Recipe

Nancy's Salty C-Chips

4 ounces unsweetened coconut cut in large shreds, can be bought at the
health food store, usually refrigerated

Spray cooking oil or Pam (I do like corn oil)

Salt, I used the finer popcorn salt with no extra additives

Place the coconut on a baking sheet, spray lightly with oil or Pam, sprinkle
with salt

Bake in a 350 degree oven for about 5-7 minutes or until lightly browned and
crispy. Makes 4 servings...put them in 4 separate snack bags (when cooled)
to keep yourself honest. 2 grams of carbohydrate per serving

I am still doing Atkins and enjoying it. I have moved onto OWL and my
weight loss has slowed down to a trickle but that's fine with me. I
have about 1.5kg to lose until I reach my highest end of goal weight,
so nice and slow will do the trick. I am still in ketosis, but always

I have recovered from the kidney infection although I am still ill, we
are not really sure what is going on. My doctor says it could be a
relapse in the chronic fatigue syndrome, and if so, this too will

I was wondering if you had any suggestions for some crunchy low carb
snacks for me to nibble on between meals? I have been eating macadamia
nuts however they are so expensive at the moment due to the season.
(also, I am a bit sick of nuts at the moment). I have tried pork
rinds and I find they don't agree with me. I live in Australia so the
low-carb products are few and far between on the East Coast. I would
be willing to make my own stuff.

More than anything else, I miss the little crunchy snacks that I used
to have in the afternoon. I used to eat vegie chips made with tapioca
but of course they are out of the question. Any and all suggestions
welcome.
