honey roasted soy nuts, first time I ever ate these, I love them and
even thought my sister's BF doesn't know it yet, he is going to make brittle and substitute these to see if it will work. Chicken sausage, 2 points totally excellent Breaded eggplant cutlets. pretty point dense, if you like this kind of thing you will love it. I will save it for the last day of the week and flex points. noodles italiano SP? easy to fix and in a rush OK but you can do the same by boiling penna pasta and throwing on a can of delmonte zucchini and tomatosauce garlic humus sp? I wish I hadn't purchased this it is just too good I have already talked about spinach pie, pitas and 2 point bagels. Lee |

I haven't tried the eggplant cutlets, think I do remember looking at them and
thinking the points were rather high. Then thought maybe I could make something similar myself (but never quite got around to trying). I do love the chicken sausage though, and am thrilled that you found them good too. They are a staple in our home, so much you can do with them. I've never tried the humus either ... am wondering if I even dare trying. I need no new addictions. There is a WW recipe to make eggplant parmesan, if you stopped after the
breading it would be similar, no cheese or sauce, just bake. and lots less points. I bought these to see if they were different and as good as they are they will only be used to fix the "emergency" food when we are both too tired. but they are tasty, I love garlic so the spread is just tooto good, Lee Joyce wrote in message ... We went out to dinner the other night and I ordered Eggplant parm. Brought

I was so disappointed when I got home. DH does not like eggplant so I
figured it was an okay meal. NOT! Had a 1/4 for lunch the next day and there is still another 1/4 serving for lunch in the refrig. Not sure if I will bother eating it or not. I'll pass your chicken parm recipe to DH, the chef. He likes quick and easy meals. Figure the only *good* think in it is the eggplant. Breading, cheese, oil, sauce all are pretty point laden. I make chicken parmesan at home (a generic version) and it's only about 3 or 4 points. Perdue packages breaded chicken cutlets that are 2 and 3 points each .. hunts canned spaghetti sauce is about 1/2 a point per cup, I add my own spices to it ... and a slice of ff mozzarella cheese. Bake the cutlets, top with sauce and cheese when done baking, and pop in the oven for just a minute to melt the cheese. Everyone in the house loves it, and it is a quickie meal with little to no muss/fuss for me. I usually serve it with some veggies, a salad and wheat pasta on the side (I like my pasta).
