Recipe - Dinner Rolls (breadmachine)

Default Recipe - Dinner Rolls (breadmachine)

I found a wonderful website with bread machine recipes. The only one
I've made so far is the dinner roll recipe, and when I made them
yesterday I decided to substitute whole wheat flour for some of the
regular flour. They turned out wonderfully, so I'm posting the recipe
as well as the website that it originally came from. They work out to 2
points per roll (113 cal, 1g fat and 2g fiber). I'm sure that the
calories could be reduced some by using Splenda instead of the sugar,
perhaps more whole wheat flour to boost the fiber. Not sure how to
lower the fat (maybe applesauce instead of the egg?). Anyway, here's
the recipe:

Dinner Rolls - Whole Wheat
Servings: 15

1 cup water
2 tablespoons margarine or butter, softened
1 egg
2 cups flour, all-purpose
1 1/4 cups flour, whole-grain wheat
1/4 cup sugar
1 teaspoon salt
3 teaspoons bread machine yeast
Margarine or butter, melted, if desired

1. Measure carefully, placing all ingredients except melted margarine in
bread machine pan in the order recommended by the manufacturer.

2. Select Dough/Manual cycle. Do not use Delay cycle.

3. Remove dough from pan, using lightly floured hands. Cover and let
rest 10 minutes on lightly floured surface.

4. Grease large cookie sheet. Divide dough into 15 equal pieces. Shape
each piece into a ball. Place 2 inches apart on cookie sheet. Cover and
let rise in warm place 30 to 40 minutes or until double. (Dough is ready
if indentation remains when touched.) (NOTE - I've started letting them
rise for a full hour - they're really light and fluffy then)

5. Heat oven to 375°F. Bake 12 to 15 minutes or until golden brown.
Brush tops with melted margarine. Serve warm, or cool on wire rack. 15
rolls. (NOTE: In my oven, set at slightly less than 375, they're ready
in 8 minutes).
