Sure wish there was a good lo-carb breakfast cereal!
I like the Atkins cereals OK, but read the labels. For instance, the
carb count for the Almond Crunch is for 2/3 cup while the Berry variety is for 1/2 cup. I was going to ask what people thought of them, but I lost the slip of paper I wrote the names on. The boxes appeared to feature numbers like 6 g and 8 g as carb counts. So, there is stuff out there. One of the low carb cereals that Walgreen's had was Keto Cocoa Crips for
$3.99 instead of about $6.xx. Serving gives 3 G carbs and 21 G protein. I decided to buy this one because I saw a Knox Gelatin recipe for Cheesecake. Just substitute my Splenda for the 1/2 cup of sugar. And pour it into a pie pan with a shell made from these Keto Cocoa Crisp bonded together with some melted butter. I can hardly wait. Try making your own. I make mine with Flaxmeal, flaxseeds, a little oat
bran, pumpkin seeds, sunflower seeds, and a few pecans. Splenda to taste. Don't overdo the nuts and seeds unless you are a big guy. A pinch of cinnamon. Mix well in a baking tin. Now get a Splenda- sweetened maple syrup and mix with a little tasteless poly-oil - sunflower is what I use, but canola or whatever would do. Mix well. Rub into dry mixture with hands. Mixture will clump together. Toast result in a very low oven, 120C, for 45 minutes. Every 15 minutes, give it a stir. Cool in tin and pack in ziplock bags. Brilliant with Greek yoghurt or ricotta. -- Jane Lumley |
