Goal: at least 150g
Actual: 125 g of marinated mushrooms
140 g or so of green beans
80 g of cherry tomatoes
1 clove of garlic
and then a few olives and a bit of spring onion

I am going through a phase of trying new salads, hence the high numbers.

I ate a new veggie today: fennel (2 bulbs). It's nice, and I certainly
will eat it now and again from now on. I bookmarked a site (venkel.nl)
that's all about fennel, and that has a lot of recipes (in Dutch, sorry
guys). Today I just boiled it and put a little diet salt on it, and the
fat & juices of the chicken breasts I fried (1 tbsp olive oil).

Lunch - brussel sprouts (steamed and seasoned with Mrs Dash) and asparagus
(sautéed in olive oil and seasonings)
Dinner - the rest of the asparagus

This reminds me I could make some of those SBD spinach/egg cups for
breakfast. It would be hard to add veggies to my oatmealg

Um, well, I haven't joined, but I should. My goal will be to eat at
least 2 veggies a day. Today I've had none :-). I like veggies,
actually, but I tend to pick proteins first and veggies as an
afterthought. I have a salad packed for tomorrow already, though.

Snugbear posted a recipe for Apple Fennel soup awhile back and I tried it.
It was delicious. That was the first time I had tried it.

Carrot sticks (2)
Baby spinach (3)
Cucumber (1)
Red bell pepper (1)
Jalepeño (1)
Black-eyed peas (1) (not sure I should count these)

Total: 8-9 servings; nothing new to me

Actually Bev I seriously considered what kind of veggies I could add to
oatmeal with some savory type spices, but it really didn't sound appealing.
I'm planning to do some spinach pies tonight to eat the rest of the week.
