My challenge for today is to eat a big salad for dinner. We are going out to
eat tonight. I just wish restaurants would not give so much food, I bring it
home and eat for days. Tomorrow I am going to the store to look for new
veggies I haven't tried before.

I didn't have any veggies with breakfast again - no time to cook today. I
grilled up a bunch of asparagus tonight and used some to make an omlette
with for the morning. I hope it reheats well.

Well, today all I had in the way of veggies was my lunchtime salad,
but I figure it probably counts for my goal of two daily veggies, as
it had lots of them (greens, carrots, cauliflower, broccoli, grape
tomatoes, baby corn, peas, celery, mushrooms). (And I did have dill
pickles and catsup on my turkey burger tonight :-) .)

Lunch - Chicken lime soup - tomato base with chunks of tomatoes
Dinner - Salad with cucumbers, onions, tomatoes, beets, carrots and green
peppers
Roast beef wrap with lettuce, tomatoes and shredded carrots

Goal: 7 servings

Actual consumption
Key: Vegetable (# of servings) * indicates new to me veggie
Avocado (1)
Tomato (1)
Carrot sticks (2)
Corn (2)
Various veggies with fajita dinner (2)

Total: 8 servings, nothing new to me
