Fallback Meal?
Do you have a particular fallback meal for when nothing else is
occurring to you? Mine seems to be cooking roasted veggies (usually red and yellow peppers, asparagus, broccoli and onion) in a pan in some olive oil, adding eggs, which have been whisked with a bit of cream or water, salt, and freshly ground pepper (and now a bit of grated parmesan cheese and pesto too), and scrambling them. Very yummy. I am also into nuked cheese variations, but I can't eat cheese all the time.... -- Jean B., 12 miles west of Boston, Massachusetts, USA |

Fallback Meal?
My "fall back" is not really a meal, but if nothing sounds good, then I'm
probably not really very hungry. What I do is keep a container of "dip" made up in the fridge and eat it with celery sticks. I seem to need the crunch and chew of the cellery. My favorite dip is: 4 oz cream cheese softened 1/2 cup (or as to taste) sour cream 1/4 cup chopped onion bacon bits as desired dash of hickory smoke flavor Mix well, and chow down. Good with celery, also good rolled up in smoked turkey. |

I do - it's chicken salad made with leftover chicken, mayo, diced celery, and serve it over lettuce, sliced cucumber and a little diced green onion. OR, and this is my fav fall-back: scrambled eggs with a tablespoon or two of cream cheese (whipped) stirred in just at the end, sprinkled with pepper, salt, and a little dill. 347/270/??? Fallback Meal?
My fall back meal.... Broccoli, celery and sauteed Pepper strips and a bit of thinly sliced beef a Stirfry of sorts spiced with either garlic and ginger, or cayenne pepper. Fallback Meal?
I always keep one of those roasted chickens from the grocery store in
my refrigerator. You know, the ones that are already cooked, warm and ready for you to take home? I take the meat off the bones and keep it in Tupperware for those moments when I need a quick salad, meal, or snack. I also have salad fixings right at hand so it's not a hassle when I'm in a crunch. I'd love to hear more ideas, though. Kathy B |

Cauliflour fauxtato soup with cheese and bacon, I keep a large batch of

My hubby doesn't lc and some of the stuff he eats would put me in a coma (bg problems). I always keep the following on hand: frozen, cooked shrimp - thaw and eat with cocktail sauce (I use the real thing sparingly), or make shrimp salad, or saute in carb-free scampi sauce cottage cheese - I happen to love it, and it makes a good side-dish to replace the starch he's eating Nathan's hotdogs - saute in skillet and have on low carb weiner roll (Google for Irene's Health Bakery for the best I've found - I'm in Ohio and buy them locally) Eggs any style - depends on the amount of effort I want to make Tonight is a good example. He wants pasta and its cooking now. I'll probably fix myself some shrimp or French toast (Irene's Guten bread soaked in egg with a little half-n-half, topped with cinnamon and Walden Farm's no carb pancake syrup. Enjoy Mary Sue |
