Default baked chicken breasts

I have kept a supply of baked chicken breasts on hand since I started low
carbing. As I desire, I'll make chicken salad (mayo, green onion and celery)
or chop it into small pieces and put low carb BBQ sauce on it.

I like having a supply of protein on hand to make quick lunches, for times when
I'm too tired, or running too late, to cook dinner, or for a quick snack, but
now I'm bored. Any ideas on things to do with pre-cooked chicken breasts?

Last week I used chicken in a spinach and cheese omelet and a chicken and
cheese omelet topped with salsa.

Chopped pickles are good in chicken salad.

What out for BBQ sauce, if it has high fructose corn syrup its not going to
help loose weight at all.

If you bake your own chicken, try wrapping it first in bacon or ham
(mmmmmmmmmm!!!)
Once you've enjoyed that, try topping with melted cheese (MMMMMMMMMM!!!)

I put sf sweet relish in my egg salad and tuna salad, but not chicken yet.
I'll try that. I

This is the No Carb Gourmet brand. Yes, I know regular BBQ sauce is quite
high! I still want to make Jenny's, but we are painting this weekend, and I
haven't had a chance.

If you can get a low carb thousand island or Russian style dressing you can
make chicken Reuben.
Just pile the sauerkraut, dressing and Swiss cheese on top of a chicken
breast.

Not a bad thing to rediscover. Do you mainly do Thai cooking?
That's my favorite cuisine. I have to get back into it. Lots I
could do LC.
