Really! No vegetables are required on this diet, either. Carol -- Fasting BG 157 227/223/150 (official weigh-day: Thursday) Bernstein 5/25/2004 Diabetes Dx 5/15/2001 Diet, Exercise, Oral Medication |

Can anyone help? ;-) Perhaps it is somewhat of a confusion. There is no way to make fake mashed potatoes out of cauliflower. Mashed cauliflower, on the other hand, is rather good food, despite not being mashed potatoes. Make mashed cauliflower by mashing cauliflower: cook until tender (steam, microwave in very little or no water, simmer in water to cover. We do the latter, but only because we know our ricer will remove any excess water). Drain. Mash. Season to taste. If you have a potato ricer, you can make a dryer and (IMO) superior product. Squeeze over the sink until the water is mostly squeezed out before ricing the now dry cauliflower. Toss with seasonings of your preference, certainly salt and butter, probably not cream (because if you wanted all that water in your butter, why drain the cauliflower in the first place?), freshly ground black pepper, perhaps a scraping of nutmeg. If you cook the cauliflower less than thoroughly tender (so it won't go through the ricer) you can still use your ricer to drain much of the water, then scrape it out of the ricer to get a lovely crunchy vegetable base for gloppy stuff like curries. I suspect that a still crunchy scrushedMartin (215/167/165 since 4/2003) $-but-not-rice cauliflower and a VERY hot wok could make a presentable fried-rice-like dish, but I'd have to re-season my sadly neglected wok to find out for sure. Oh thank God, now I won't have to spend hours searching for for that
danged, elusive, cauliflower recipe. ;-) -- Cheri Type 2, no meds for now. Damsel in dis Dress wrote in message ... You'd have to make it out of uncooked potatoes, in order to carve the fine detail of the cauliflower into the potatoes. It's a meticulous process. Are you up to the task? That was done on the TV show: "Low Carb and Lovin' It"
I don't remember much, but I think he added some cream cheese to the food processor. |
