low carb recipes and Passover
Anyone have any good low carb recipes for Passover? Meat and egg dishes are easy; substitutes for matzo is what I am looking for.

I don't do passover, but it seems like Matzo is pretty low-carb as far as
desserts are concerned. Check out this month's Cooking Light, they have a whole section on passover. You may even be able to get it online. Matzo isn't a dessert.
As for Pesach... just don't eat it. I have a representative nibble during the seder... then I don't eat it the rest of the week, the same way I don't eat bread. Matzo is entirely carbs.
The ingredients a flour and water. Period. There's no requirement that one eat matzah during pesach - except for a few ritual bites during the seder - so just avoid it for eight days the same way you've been avoiding leavened bread on your low-carb diet. I was thinking a few days ago about how easy pesach is going to be this year because I am already not eating most of the stuff that's not permitted.
