Walkerswood Blaff

Ingredients:

a.. 4 whole, snapper, tilapia, sea bream or similar fish scaled and gutted
b.. 1 lime, juiced
c.. 5 cups water
d.. 2 tsp salt
e.. 1 onion, chopped
f.. 2 garlic cloves, crushed
g.. 1 tsp Walkerswood Scotch Bonnet Pepper Sauce or Jonkanoo Pepper Sauce
h.. 2 bay leaves
i.. 1 fresh thyme sprig
j.. 1 tsp allspice
Directions:
Place the fish in a bowl with half the lime juice, half the water and half
the salt. Marinate for about 1 hour. Drain and discard the marinade. Pour
the remaining water into a saucepan and add the onion, garlic, hot pepper
sauce, bay leaves, thyme and allspice. Bring to the boil and simmer for 5
minutes. Add the fish, cover and simmer for 5 minutes or until fish is
cooked. Add the remaining lime juice and salt to taste. Serve hot. Serves 4
Preparation and cooking time: 1 hour marination + 15 minutes.
