Too much Christmas food
Um, how do you make your vinaigrette? I am looking for a good, simple
homemade salad dressing. Elise "A Ross" wrote in message ... In article , "Beverly" wrote: Our department held their annual Christmas carry-in earlier this week. The salad will be mixed greens with raisins, walnuts, chopped apple, and blue cheese with a raspberry/pecan viniagrette--very easy to throw together. I figured I'm under enough stress this time of year to worry about overeating or out-cooking my in laws (not too hard to do, as one will bring a bag of baby carrots and dip, and the other will bring cool whip bowls to carry home leftovers). Elise This is what I do: Use 3 parts red wine vinegar to 1 part extra virgin olive oil. Make sure both are of good or great quality, it makes a huge difference. Mix the vinegar with herbs/spices you like first. Add garlic powder, a sprinkle of salt, freshly cracked black pepper, thyme, parsley (Italian broadleaf), or any number of others you like. Then add the olive oil, whisk and mix with salad greens. I like baby greens, arugula and spinach, with a little radicchio. Yumm.. Martha |

There's a brand called Ken's that makes a fat free and a low fat version. Maple Grove farms has a nice, tangy raspberry dressing, as does Marie's. Not sure if those brands are available in all areas... If you're looking for a recipe, cooks.com or recipesource.com. Great search engines, lots of recipes. Amy |

Amy I have loved all of the Ken's dressings except maybe the low fat blue cheese. I still get the good Marie's stuff and just eat less. Laurie - headed home tomorrow! |

Too much Christmas food
After reading your post, the light came on. I've been wondering what to
bring for the office potluck. I'll bring fresh fruit and veggies, so we'll have at least one thing that's healthy to eat. Cat "Beverly" wrote in message ... "Chrys" wrote in message ... You can sure tell what time of year it is. My company has had a steady supply of donuts, cakes, candy, cookies, etc. since the week before Thanksgiving. They keep coming. Why does everyone feel the need to make all this stuff? I've been resisting so far, I know it's a very slippery slope. One piece of chocolate would end up being 10 before the day was over. Our department held their annual Christmas carry-in earlier this week. I was really surprised at the number of salads this year. They weren't the calorie laden salads but lettuce with fresh fruit, feta cheese, etc. My plate was filled with salads and one piece of baked chicken. The number of desserts was much smaller this year and I limited myself to a couple of bites of my favorites. Thankfully I'll be able to avoid the abundant supply of candy, cookies, etc that appear in the office this year. I had some vacation I needed to use before the end of the year and the company gave us 2.5 additional days of vacation recently. Yesterday was my last work day until January 5. I'm hoping to avoid the 5 pounds I often gain during the holidays. Beverly |

The salad sounds fabulous! Shrimp are a good idea, too.

I buy a lovely raspberry f/f dressing made by Girard's. A bit pricey, but
worth it. Cat "A Ross" wrote in message ... In article 6XpCb.3446$5Q6.2478@okepread04, "Cox SMTP east" wrote: Um, how do you make your vinaigrette? Another great, but GREAT salad dressing is Lite-House lo-fat ranch with some
kind of salsa in it. Sorry, that's the best I can do to describe it. It is kind of pink in color. Tastes wonderful and isn't too high in calories. I've only had it once at the office, but I'm planning on buying some for home first chance I get. Cat "Cox SMTP east" wrote in message news:6XpCb.3446$5Q6.2478@okepread04... I need to do some experimenting... -- jmk in NC |
