Default Any good recipes for ground beef.....?

I am looking for some good ideas to make low carb ground beef
recipes.......I already do bun-less cheeseburgers, taco salad, and
hamburger steaks. Also low carb spaghetti...any other interesting and
unique ideas out there? I am all out......!

Eggplant Supper Soup

2 tbs. butter 200 cal, 0 carb
2 tbs.olive oil or salad oil 200 cal, 0 carb
1 medium-sized onion, chopped 42 cal, 9 carb, - 2 fiber, net 7
1 lb. lean ground beef 1223 cal, 0 carb, 83 g fat, prot 111
1 medium eggplant (about 1 lb.), unpeeled, diced 142 cal, carb 33, -14
fiber, net 19, prot 6
1 clove garlic, minced or pressed 4 carb, 1 carb
1/2 C. each chopped carrot and sliced celery 24 cal, carb 6, -2 fiber, net
4, prot 1
1 large can (about 28 ounces) tomatoes 232 cal, carb 56, -8 fiber, net 48,
prot 8
2 cans (about 14 1/2 ounces each) beef broth 8 cal, 2 carb
1 tsp. Splenda (optional)
1/2 tsp. each pepper and ground nutmeg
1 tbs. minced parsley negligible
Salt
Grated Parmesan cheese

Melt butter in oil in a deep 4- to 5-quart pan over medium heat. Add onion
and cook, stirring often, until soft (about 5 minutes). Crumble in beef and
cook, stirring often, until lightly browned. Stir in eggplant, garlic,
carrot and celery. Cut up tomatoes; stir in tomatoes and their liquid,
broth, sugar, pepper, and nutmeg. Bring to a boil over high heat; then
reduce heat, cover, and simmer for about 30 minutes. Add parsley, season to
taste with salt. To serve, ladle soup into bowls; offer cheese to add to
taste. Makes 6 to 8 servings.

Totals, 2075 cal, 54 g fat, 81 net carb, 126 prot,

Mexican Hamburger-Stuffed Green Peppers

4 large green peppers
1 lb. hamburger
1/3 c. chopped onion
1/3 c. chopped celery
3 c. cooked chopped up cauliflower
1 c. salsa
2 t. chopped green chilies
2 c. shredded Monterey jack & cheddar cheese mix
1/4 c. salsa

Cut tops off peppers & remove seeds. Put in boiling water & boil 6
min. Remove & set aside. Combine hamburger, onion, & celery & cook until
done. Drain off grease. Stir in rice, 1-c. salsa & chilies.
Fill peppers with hamburger mixture. Arrange in pan. Top with cheese &
salsa. Put a little water in pan. Cover tightly. Bake at 350º for 45 - 55
min.


You can make this ahead of time & cook later. Also this freezes really well.
Taste like you just cooked them.

Each half pepper is 606 calories, fat 45 grams, carb 15 less 3 fiber, net
12, protein 36 g.

Dip Peppers, Cucumbers or other veggies in this.. or pork rinds.

or I've actually eaten it almost like a chili

Ingredients:
1 lb. browned ground beef;
1/2 lb. browned Italian sausage;
1 jar of your favorite salsa;
1 small package of Velveeta cheese;

Mix all ingredients well over low heat until thouroughly melted together and
serve with pork rinds. Try some cream cheese with this dip. It adds a great
taste. You won't believe how good it is and it is very low in carbs!

For something special I like to upgrade the quality of the ground beef to
Certified Black Angus beef. It does cost more, but I find the flavor
distinctively different from a normal or an angus beef burger. You might
enjoy this concoction.

Take 1/2 lb hamburger and 1/2 lb bulk Italian sausage then add an egg.
Flatten in your casserole dish and bake until done. After draining the
grease, take a few stewed tomatoes add some oregano, majorum, and garlic,
then top with your favorite pizza toppings. Stick under broiler until
cheese is done to your liking.

Stuffed peppers and/or stuffed cabbage - just use your favorite recipe,
but leave out the rice.

One of my favorites is a hamburger/cabbage stirfry. Cook up about a lb
of hamburger in a wok with some freshly minced ginger and garlic, add
half a shredded cabbage and coat with the burger grease and fry until
lightly browned. Top off with some soy sauce.

Yummy. Very yummy. Now that I think of it, I don't have any cabbage...
need to pick some up.

Just plain old meatloaf. For me this is the ultimate
comfort food. Of course, I eat too much when we make it so
we don't make it often.

Chili

hamburger-fry up
Saute-onions, garlic, chili peppers or jalapeno's or whatever vegies
sound good to you.

Add tomatoe paste, chili seasoning, salt pepper a can of black soy beans (
those are nice too..not only low carb but very high in fiber)....

And there ya go.
